Roberto Santana, Alfonso Torrente, Laura Ramos and José Martínez are the 4 winemakers of Envínate. They started out giving oenological advice, but decided to combine this with their own wines in the same areas in which they also advise. Their philosophy is to create fresh, fresh wines from local grapes that reflect the unique terroir and Atlantic climate. The results speak for themselves: honest and interesting wines.

Táganan is the name of the village where the vineyards (northwest on volcanic soils) are located. These vineyards are located closer to the coastline. Taganan is a blend of different terroirs in Tacaronte (Tenerife). The red Táganan comes from different plots, mainly planted with Listán Negro and Negramoll and also some Mulata, Listán Gacho (pink/rosé) and Malvasía Rosada. It fermented at 50% to 70% as bunches depending on the plot and matured for a year in well-seasoned, neural oak barrels of 228 liters. The taste is lively, long and fresh, with fine tannins and deeper and very layered with aromas of subtle pepperiness, sesame, grapefruit and a positive hint of some earthiness. A beautiful wine of which there are always only a very limited number of bottles. In an average year around 2,500 maximum and often less. A collector's item is this Taganan. A red super wine with an Atlantic Sea injection. Parker writes in his review: "A real triumph"

  • Grilled aubergine with harissa and yoghurt-mint dressing
The smoky grill notes and light spice match the earthy, smoky character of the wine. The yoghurt provides a fresh counterbalance to the acids.

  • Cod stewed with tomatoes, olives and capers
The saltiness of the fish and capers fits seamlessly with the salty minerality of the wine. The juicy tomato supports the fresh red fruit.

  • Pulled pork tacos with fermented red cabbage and coriander
The smoky, slightly sweet notes of the meat are nicely balanced by the acidity of the wine. The fermented vegetables enhance the lively tension.

  • Roasted cauliflower with ras el hanout and pomegranate seeds
The warm spices and fresh touch of pomegranate complement the wine's floral and spicy profile.

  • Ratatouille with rosemary and thyme, served with whole wheat couscous
The layering of vegetables and herbs matches the complexity of this field blend, while the texture remains light.

  • Chicken thigh fillet baked with garlic and lemon zest, served with roasted fennel
The fresh citrus element and aniseed fennel bring tension and accentuate the wine's lively acidity.

Envínate (translates as "wine itself") is the brainchild of 4 friends, winemakers Roberto Santana, Alfonso Torrente, Laura Ramos and José Martínez. This gang of four was founded in 2005 while studying oenology at the University of Miguel Hernandez in Alicante. After graduating, they formed a winemaking consultancy, which evolved into Envínate, a project focused on exploring distinctive plots of land, mainly in the Atlantic regions of Ribeira Sacra and the Canary Islands. Their shared goal is to make very pure and authentic wines that express the terruño of each parcel in a clear and concise way. To this end, no chemicals are used in any of the Envínate vineyards, all plots are picked by hand, the grapes are trodden and the wines are fermented exclusively with wild yeasts, with a varying proportion of whole grape bunches included. Before maturing, the wines are aged in old barrels and concrete, and sulfur is only added at bottling when necessary. The result is some of the most exciting and honest wines produced in Spain today.
