The Château Pavie vineyard covers 42 hectares. It's a large estate, yet it encompasses diverse terroirs, each with its own unique microclimate. Château Pavie is often one of the last wineries to complete its harvest. They operate responsibly: 70% of the vineyard is now organic, and they aim for 100%.

Today, Gerard Perse is the man in charge. A self-made man and millionaire from Paris. The son of a painter, he took over a small grocery store in a suburb in 1976 and subsequently achieved enormous success with franchise supermarkets for Champion (Carrefour). Until, finally, he decided to focus solely on wine. In 1998, after acquiring several other wineries, he purchased Château Pavie. In the region, he is seen as a disgrace to Saint-Émilion wines because of the techniques he employed, such as the premature cutting of unripe grape bunches to limit production and enhance quality. Considered an unheard-of waste at the time, today almost everyone does it. The success of his wines has significantly enhanced his reputation. Not only Parker, but also other international wine critics give them the highest scores. And wine with a story.

The 2022 Château Pavie is a blend of 52% Merlot, 30% Cabernet Franc, and 18% Cabernet Sauvignon. The grapes come from 34-year-old vines spread across 42 hectares in Saint-Émilion. The soil is divided into three distinct areas. First, there's the Saint-Émilion limestone plateau, located approximately 85 meters above the Dordogne River. This consists of clay and limestone soils on limestone with marine fossils (two-thirds of the vineyard). Next comes the Côte Pavie, the "mid-mountain range," 55 meters above the Dordogne River, facing south. This consists of brown clay-limestone soils with a fine texture. Finally, there's the "Pied de Côte," consisting of sandy, sandy-clay, and sandy-gravel soils. Prune to eight buds for the old vines and to six buds for the young vines. Thinning and leaf stripping are tailored to each plot. The grapes are hand-picked and sorted. Vinification takes place in temperature-controlled wooden vats. Malolactic fermentation takes place in barrels. Finally, the wine is aged in 75% new oak and 25% one-year-old barrels. This is a 1.5-liter magnum—even more delicious, festive, and with a longer drinking window.
