Cepa 21 was founded by one of Ribera del Duero's best winemakers: Emilio Moro. Since 2022, CEPA 21 has stood on its own two feet and is led by Jose Moro (the brother of Javier Moro, the owner of Emilio Moro). The vineyards of Bodegas Cepa 21 are one of its greatest assets. They are located at an altitude between 750 and 900 meters above sea level and face north. Both factors allow the grapes to ripen gradually, giving them complexity and freshness. The project has 50 hectares of its own vineyards on soils of silty sand, clay or limestone, most of them very close to the winery and planted with the area's clone of centuries-old vineyards (the purest Tempranillo from the Ribera del Duero). The winery is equipped with fully equipped facilities, consisting of a tasting room with a beautiful view of the barrel room, a terrace that is a veritable viewpoint over a sea of vineyards and a hall with a spectacular window that links the modernity of the complex with the tradition from the vineyard, Cepa 21 is pure minimalism and efficiency. The word Hito means milestone and is often a stone column used to indicate direction or distance on roads or to mark out an area. The Hito wines were born from the idea of offering a wine with the freshest, most aromatic version of what Emilio Moro (CEPA21) can offer without extensive aging and using the same grapes in their great reds. It's new, it's a milestone in winemaking and it's a milestone in price.

The grapes for this great rosé only soaked for a few hours at a low temperature. The fermentation is between 12 and 15 degrees for 20 days and then had 3 months of aging on its lees (sur lie). The Hito rosé has a very light pink color like a Provence rosé but with the class of the Tempranillo grape which provides more complexity. On the nose, the Hito rose is intense, fresh and fresh with ripe red fruits such as strawberries and raspberries, which later evolves into more flowers with more complex notes. The mouthfeel is very fresh and silky with balanced acidity. The finish is long and pleasant and this is one of the best rosés in its price range. This is incomparable to the many roses that pay more attention to the bottle and marketing than to the content, but in short this also comes from the Moro family. Delicious as an aperitif but also great as a dinner wine with, for example, Asian food or Sushi.

In addition, register viticulturist and culinary journalist Anne-Wies van Oosten recommends a delicious spring salad of thinly sliced Serrano ham, chunks of Blu Passito cheese (or another blue mold) and a fresh fig on a bed of arugula with this beautiful rosé. In the May edition of Hubrecht Duijker he praises the HITO Rosado and the HITO Tinto. Hubrecht says the following:
"After tasting in the morning, the Hito Tempranillo rosado was relaxed in the evening, with smoked Sockeye salmon from Alaska - and that was a delicious combination. The white orange, slightly pink wine comes from Ribera del Duero, quite northern in Spain. The tempranillo that grows there, and dominates it completely, is a regional variant of the mother grape from Rioja (and is often called tinto fino along the Duero).The company behind the Hito Tempranillo is Bodegas Cepa 21, a daughter of the family firm Bodegas Emilio Moro. Especially for Cepa 21, the brothers Javier and José Moro, together with some friends, built a hypermodern design cellar (with restaurant) where grapes from 50 hectares are grown.
