Description
Puligny-Montrachet Premier Cru Sous Le Puits has a bright and clear appearance, a buttery and spicy aroma. In the mouth, the sensations are opulent and the roundness is reminiscent of Meursault wines, close to the terroir.
The terroir is located near the hamlet of Blagny, on the border of the Meursault appellation. It consists of two parcels facing east at an altitude of 360 meters and is located on the top of the Puligny-Montrachet hill, on a deep clay-limestone soil. These vines, from the Chardonnay grape variety, were planted in 1951 at a density of 10,000 feet/ha on an area of 29.36 ares.
The vines are pruned using the simple guyot method, pitted in the spring and cultivated rigorously. The soil is worked mechanically (bumped, unbumped, chopped). In the summer, the fight against diseases is carried out in a sustainable way. Green harvests are carried out depending on the amount of buds.
After careful control of ripeness, the grapes are harvested by hand and taken to a winery in small crates. The harvest is lightly trampled so that the juice flows into a pneumatic press. The juice is then settled. After the wine is placed in barrels by gravity, the must ferments in oak barrels. The cuvée is placed entirely in 228-litre barrels, 20% of which are renewed each year. Coopers from the region produce these barrels and the fine-grained staves chosen come from the forests of the Allier department. After 12 months of maturing on fine lees, the wine is blended and refined in barrels for 3 months, clarifications are added and the product is bottled after a light filtration.

He leases out parts of his rare parcels to some of the most hallowed names in all of Burgundy, keeping a portion of his choicest sites for wine under his own label. All Guy’s grapes are grown and vinified “en metayage” by one of St. Aubin’s top growers and deliver all the hallmarks of top Côte de Beaune Chardonnay.
