Winning doesn't always mean being first. Winning means you try to do better than you've ever done before. This is the winemaker's slogan and explains the title and also the fantastic label. And the winner is... is made from a mosaic of organic vineyards that represent the diversity and particularity of soils, exposures and altitudes in the Penedès region.
Celler Credo has partnered with top growers in the Penedès region with whom we share values and a commitment to sustainable viticulture rooted in respect for identity, territory and landscape.
All Celler Credo grapes are harvested by hand to ensure an accurate selection of the fruit and to guarantee the excellent quality. We also pay great attention to the ripening of the grapes with the aim of producing wines with natural, fresh acids.
The Celler Credo And the Winner is... is a blend of mainly Xarel·lo supplemented with Macabeu (Blanc des Noirs from Monastrell) and Parellada. Historically, these varieties have defined the essence of Penedès, and in particular the Xarel·lo variety. Recaredo, the owner of Celler Credo, is a strong advocate of working primarily with grapes native to the area. The grapes are grown according to the principles of organic viticulture and are harvested by hand to ensure an accurate selection of the fruit and guarantee the excellent quality. Furthermore, great care is taken in the maturation of the grapes with the aim of producing wines with natural, fresh acids with the intention of achieving an expressive and balanced wine. Priority is given to low-yielding vineyards without irrigation, an approach that gives our wines their distinctive Mediterranean identity while ensuring responsible management of scarce water resources. The must fermentation takes place in stainless steel tanks on indigenous yeasts isolated from the Celler Credo vineyards, an essential element for producing true terroir wines. And the winner is... may contain natural sediments due to our minimal intervention.
The wine is fermented and matured on stainless steel and remains in contact with lees for several months. In the glass the wine has a nice light straw yellow color. Very pure and delicate on the nose with soft notes of mineral yeast notes from the sur lie maturation, wild flowers and herbs, soft white fruit and a little fennel. Fresh, nicely dry in the mouth with again the white fruit and a mineral touch in the aftertaste. A delicious, fresh, elegant white vin naturale wine (so minimal added sulphites) with a perfect price/quality ratio.
Celler Credo by Recaredo
A project of Recaredo, for which a few plots have been purchased for the production of these vin naturel wines. The aim is to make a pure expression of the Xarel.lo by using different maturation and fermentation methods. A special pure style wine, great for wine/food combinations!
The following facts testify that serious effort is being made to make this great wine extremely sustainable
- Only 12% alcohol - so fitting in the modern style of fine wine with less alcohol
- Sulphite only 44 mg/l (150 mg/l is allowed by the EU for organic/organic white wines)
- Residual sugar only 0.5 g/l
- Vegan wines not cleared with animal proteins
- 390 gr EcoBottle (Less weight, less impact on the carbon footprint
- Organic Farming - Certified Organic by CCPAE
