Description
The Celler Credo Volaina (in Catalan = Butterfly) is the ultimate representation of the Mediterranean Parellada variety, grown at an altitude of more than 500 meters is made from grapes harvested from two vineyards in the municipality of Aiguamúrcia, in Pla de Manlleu, one of the highest areas in Penedès. One is known as Els Pinyers (owned by winegrower Jaume Bargans); the other, Sant Miquel (owned by winegrower Jaume Nin). Both are grown according to the principles of organic viticulture. The Parellada grapes are harvested by hand to ensure an accurate selection of the fruit and to guarantee the excellent quality. Furthermore, we pay great attention to the maturation of the grapes with the aim of producing wines with natural, fresh acids with the intention of achieving an expressive and balanced wine. The must fermentation takes place in stainless steel tanks on our own yeasts from the Celler Credo vineyards, an essential element for producing real terroir wines. To express the true Parellada character as fully as possible, at the end of fermentation we do a light maceration with the destemmed grapes, followed by a bâtonnage of the lees and aging in barrels for six months. This wine may contain natural sediments due to our minimal intervention. Wonderfully fresh with good fresh acidity and very light in alcohol. Especially white fruit, citrus and a mineral touch in the nose. Very refreshing in the mouth and an almost ideal aperitif.

The following facts testify that serious effort is being made to make this great wine extremely sustainable
- Only 9.5% alcohol - so fitting in the modern style of good wine with less alcohol
- Sulphite only 39 mg/l (150 mg/l is allowed by the EU for organic/organic white wines)
- Residual sugar only 0.5 g/l
- So vegan wines are not cleared with animal proteins
- 390 gr EcoBottle (Less weight, less impact on the carbon footprint
- Organic Farming - Certified Organic by CCPAE
THE LABEL
The butterfly on the Volaina label is a quip to the Catalan Butterfly Monitoring Scheme, which studies the role of this group of insects ("volaines" in Catalan) as bio-indicators. Volaina is the result of a joint effort by Celler Credo and the Granollers Natural Science Museum to protect the environment and the animals that inhabit it. The agreement between them provides a framework for conducting research and raising awareness of the important role butterflies play in the ecosystem, both as pollinators and as a food source for other species. Celler Credo has partnered with top growers in the Penedès region with whom we share values and a commitment to sustainable viticulture rooted in respect for identity, territory and landscape.

Recaredo Corpinnat is without doubt a reference for long-aged cavas and, together with Mestres and Gramona, is considered the Grandcru and the top of the cavas. Recaredo also has a silent white wine project and these wines are made under the Celler Credo name. Celler Credo or 'free-of-mind' label from Recaredo. With these still white wines, the Recaredo team discovers what is possible with Xarel.lo from different teroirs and vinification methods.
Impeccable Vins Natural! Recaredo has acquired a number of (very) special vineyards in the Penedès region for the production of refined natural wines. The aim is a pure expression of Xarel.lo where different fermentation methods and maturation processes are used. The wines are made by the well-known winemakers Nuria Arteaga and Ton Mata and they know exactly how to strike the right chord and make particularly pure and energetic wines from Xarel.lo, whereby the wines, as also with the Cavas from Recaredo, have become benchmark wines for ' nature' style Xarel.lo in the Penedès. Aged on the lees, macerated with the skin or stems of the grape, without the addition of sulphites – modern techniques or techniques learned from our grandparents... In short, a thousand and one ways to interpret Xarel-lo. In other words, Xarel-lo is the Credo.
