The Gianfranco Fino Sé, like the Es, is made from 100% Primitivo from a small vineyard of only 5 HA, but even more special is the forced yield of only (on average) 400 grams of grapes per plant. Gianfranco Fino's Sé is a top wine that consistently receives high ratings and distinguishes itself as the number 1 Italian wine according to Gambero Rosso's prestigious Vini d'Italia. This 1,000-page guide rates more than 10,000 wines from 2,350 producers and has awarded Gianfranco Fino's Sé the highest rating of Tre Bicchieri (three glasses). The Sé, a Salento Primitivo IGT, is characterized by its ruby red color that radiates liveliness and clarity. This wine is produced with care in the Manduria region, with a soil of limestone and clay, ideal for the Primitivo grape. Gianfranco Fino applies a classic Apulian Alberello system known as 'hare's ears', and the grapes are harvested manually at the end of August to ensure optimal ripeness.

On the nose, Sé offers a fruity explosion of raspberries, cherries and blackcurrants, enriched with spicy notes of rosemary and thyme, and subtle hints of leather and chocolate. Start winegrowing in 2004 and make the best wine in Italy 10 years later? Sounds like a romantic dream, but Gianfranco Fino has only just done it. He started in Manduria with a small plot of land with 50-year-old Primitivo vines, striving for an extremely low yield per vine and, unlike many other winemakers, relying on the naturally occurring wild yeasts. Slowly he expanded the number of hectares and also planted Negroamaro.
A perfectionist with an eye for detail who does everything differently in the vineyard than the rest. He even lets his grapes dry on the vine for a while for even more flavor and sugar concentration. Although this reduces the alcohol percentage to a great height, without disturbing the balance in the wine. That drive and idiosyncratic approach has ensured that Fino's wines are among the absolute top in Italy, as witnessed by the superlatives in Gambero Rosso. His achievements have also definitively established Puglia's name as a reference for quality wine.
