The Gianfranco Fino Sé, like the Es, is made from 100% Primitivo grapes from a small vineyard of only 5 hectares, but even more remarkable is the forced yield of only (on average) 400 grams of grapes per plant. The Gianfranco Fino Sé is a top-tier wine that consistently receives high ratings and distinguishes itself as the number one Italian wine according to the prestigious Gambero Rosso Vini d'Italia. Gianfranco Fino Se 2021 harvest & vinification
The Sé, a Salento Primitivo IGT, is characterized by its ruby-red color that radiates vibrancy and clarity. This wine is carefully produced in the Manduria region, with limestone and clay soils ideal for the Primitivo grape. Gianfranco Fino uses a classic Apulian Alberello system, known as "hare's ears," and the grapes are hand-harvested at the end of August to ensure optimal ripeness.
During the maturation and aging process, Gianfranco Fino aims to highlight the characteristics of the Primitivo grape. After careful hand-harvesting and meticulous selection, the grapes undergo a gentle pressing, followed by a two- to three-week maceration period in large stainless steel tanks. This process ensures optimal extraction of color, aromas, and flavors from the skins, while the must temperature is carefully controlled to preserve the wine's freshness and vitality. After maceration, the wine is transferred to oak barrels where it ages for approximately nine months.

Slightly more accessible next to the other super full-bodied wines in this flight, the Gianfranco Fino 2016 Primitivo Sé opens to ripe blackberry and Morello cherry aromas, with plum cake and candied or dried fruit. Thanks to some nine months of aging in French barrel, this wine also displays generous aromas of mesquite smoke and teriyaki, something you might serve with roasted red peppers and grilled pork chops. Some 3,500 bottles were produced.

Start winegrowing in 2004 and make the best wine in Italy 10 years later? Sounds like a romantic dream, but Gianfranco Fino has only just done it. He started in Manduria with a small plot of land with 50-year-old Primitivo vines, striving for an extremely low yield per vine and, unlike many other winemakers, relying on the naturally occurring wild yeasts. Slowly he expanded the number of hectares and also planted Negroamaro.
A perfectionist with an eye for detail who does everything differently in the vineyard than the rest. He even lets his grapes dry on the vine for a while for even more flavor and sugar concentration. Although this reduces the alcohol percentage to a great height, without disturbing the balance in the wine. That drive and idiosyncratic approach has ensured that Fino's wines are among the absolute top in Italy, as witnessed by the superlatives in Gambero Rosso.
