The grapes are harvested completely manually in small crates and after extensive monitoring during growth and after a first selection in the vineyard, the 2nd selection takes place. The grapes then go to a cold room and then to the final selection table. Everything at Carraovejas takes place by gravity, so there are no pumps that move the must and wine too aggressively and often with too much oxygen. The wine then goes for fermentation in small wooden barriques with indigenous yeasts. This gets all the time. The malolactic fermentation takes place in the same barrels and then the Anejon goes by gravity one floor lower to the barrel cellar where it is allowed to mature in new French oak for a minimum of 18 months.
The Anejón shows us the scent of the terraces of the Ribera del Duero. Located high in the Ribera del Duero with an almost manic focus on quality, great wines are made here. This winery is also the owner of Ossian, the famous winery from the Rueda with its Verdejo vineyards, some of which are 150+ years old. The wine is a blend of Tempranillo (94%), cabernet sauvignon (2%) and merlot (4%) and is only produced in exceptional years. The 2018 is the successor to the 2016 and was only released at the end of 2022. The balance is the basis of the fine, delicate and at the same time intense character of the wine. On the one hand, the scents of flowers integrated with a powerful fruit show the vibrancy of the environment. On the other hand, it emits freshness and a vibrancy and energy, characteristic of a location as unique and genuine as the terraces of the Carraovejas. The 2016 vintage has received 93/100 points from James Suckling.
The wine is often compared to the Aalto PS and that is not entirely strange as the former winemaker and director Javier Zaccagnini of Aalto worked closely with Pago de Carraovejas

Pago de Carraovejas is a project of the famous Chef Jose Maria Ruiz who pours this wine as house wine in his restaurant in Segovia under the name "Autor". Recently the famous winery Ossian has taken care of this bodega. Pago de Carraovejas has unique wines, each with its own unique hugely captivating personality. The wines have very expressive aromas, intense color, fleshy, powerful and exuberant taste that manifests each of the characteristics of each variety. In recent years, this bodega has made a huge boost and is now one of the top houses in the Ribera del Duero.
The bodega Pago de los Capellanes is located in the center of the famous wine growing region of Ribera del Duero in the province of Burgos. It is located just outside Pedrosa del Duero, where one of the best grapes in the whole Ribera is harvested. The name 'Pago de los Capellanes' is also the name of the area in which the vineyards and wine cellars are located. The Spanish word 'pago' means administrative area. Pedrosa de Duero is located at an altitude of 800 meters. Clay and limestone soils dominate the slopes of the region, in which the vines must be deeply rooted to get water. As a result, on the one hand there is a small, but on the other hand, well-concentrated production potential. There is 500 ml of precipitation per year and the weather conditions are extreme. Summers are very hot at up to 45 degrees in the vineyards and winters very cold. Some days it is 0 degrees. During the harvest it can reach up to 25 degrees during the day, while freezing at night. This promotes the ripening process of the grapes, which again increases the alcohol and tannin content and enhances the color. But the acidity remains the same.
In the beginning, the winery only had a few acres with a few thousand vines with the traditional pin pruning. Later, the Rodero couple expanded the wine-growing land to over 100 hectares. On that ground, 80% is planted with tempranillo (in the Ribera del Duero, it is called tinto fino), 10% with cabernet sauvignon and 10% with merlot. The maximum production quantity of the winery is 5000 kg of grapes per hectare. This number is significantly below 7000 kg per hectare prescribed by the Ribera del Duero control body.
