Description
The Hans Wirsching winery is one of the most traditional and renowned wineries in Franconia. The family has been cultivating wine for centuries; since 1630! Today, the company is managed by Andrea Wirsching and Dr. Heinrich Wirsching. On 90 hectares in and around Iphofen, mainly dry white wines are produced here from Silvaner, Riesling and Scheurebe.
Some wines are still bottled here in the typical Franconian “Bochsbeutel” bottle, whose name is derived from the word “book”, because it fitted like a bottle into the bag in which monks and pilgrims carried their prayer books. It has been a trademark of special Franconian wines since the beginning of the 18th century.
Hans Wirsching is the reference of Franken and the national and international wine press is also full of praise for their wines. Hans Wirsching works with great respect for nature and the environment and in a sustainable way.
The “Kammer” vineyard, located northeast of Iphofen, about 100 km northwest of Nuremberg on a “Keuper” soil; (sediment of marshy primeval forests). The wine ferments and ages only on stainless steel to preserve freshness.
The Hans Wirsching Iphöfer Kammer Silvaner Trocken Grosses Gewächs comes from a specific plot in the Iphöfer Kronsberg and was previously sold as Kronsberg GG. The Iphöfer Kammer "VDP. Grosse Lage" is a stylized, clear, bright, intense and yeasty Sylvaner with its typical fruit aromas such as pears. In the mouth this is a juicy, fine and remarkably salty, not too heavy Sylvaner. Spicy, peppery, mineral, powerful yet juicy acids with a long balanced finish. Gastronomically a great wine.

WINE-FOOD SUGGESTIONS:
Grilled zucchini with lemon and feta
The fresh vegetables and salty feta complement the tight acids and mineral undertones of the wine.Salad with green asparagus, egg and potato
The classic German flavours in this salad go well with the full structure and earthy tones of the Silvaner.Baked cod with butter sauce and capers
The soft fish and slightly creamy sauce are beautifully balanced by the tension and freshness of the wine.Pasta with creamy leek sauce and smoked salmon
The creamy character and slightly smoky notes of the salmon are nicely counterbalanced by the freshness and spiciness of the wine.Roast veal with a mushroom and tarragon sauce
The soft texture of the veal and the earthy sauce perfectly match the depth and savoury notes of this Silvaner GG.Risotto with celeriac, truffle and roasted hazelnuts
The creamy texture, earthiness and nutty notes in this dish enhance the full, complex profile of the wine.

December 2021 Week 1, The Wine Advocate
The 2019 Iphöfer Kammer Silvaner GG comes from the center of the Kronsberg and opens with a deep, pure and intense, slightly flinty, reductive and herbal bouquet intertwined with ripe fruit aromas. Full-bodied and rich yet also very fine and provided with a delicate mineral freshness and finesse, this is a silky Sylvaner with fine tannins and a long and intense finish.13.5% alcohol. Screw cap. Tasted in October 2021.
This was another impressive tasting at the Wirsching estate. The first 2020s, including the Erste Lage (premier cru) wines, are highly promising and so are the 2019 GGs (grands crus), which are released only after two years.
2019 was dry and very warm, but it did not have the long dry spells and temperature peaks like 2018 did. Some frost in the spring reduced yields but not qualities. The yields are reduced two to four weeks after flowering anyway, at least in the GG sites, by cutting away the top of the vines and their shoulders. The current collection shows once again that Wirsching can claim the throne of the Steigerwald district, where the vines root in deep Keuper (marl) soils. There are hardly any more expressive and powerful Rieslings and Silvaners than the single-vineyard wines from Andrea and Stefanie Wirsching. Klaus-Peter Heigel, who as cellar master has given the wines a new precision, freshness, depth and elegance, probably also deserves credit for the recent upswing. Possibly Wirsching has never been better than it is today.
