At Remirez de Ganuza they only work with very old vines, the average age of which is 60 years or more. About 90% of the vines are Tempranillo, the rest of the vineyards include Graciano, Viura and Malvasia. The vineyards are 'en gobelet' but with a support on wire so that there is a greater exposure to the sun and a better photosynthesis. A unique system that Fernando developed himself.

The name Trasnocho means "Overnight" or the "Next day" and comes from an old tradition in Rioja in which in the distant past the harvested grapes were unloaded into a large concrete container (the size of a swimming pool). The first wine from the fermented grapes was called Lagrima (light wine). The next wine was called Medium and was a somewhat fuller wine. These two wines were obtained by pressing purely by gravity. The third wine from this process was called Repiso which means flattened and is actually pressing by stamping with the feet. Once flattened, the bunches were left overnight and the wine that flowed from this was called Trasnocho (the next day) and is the finest of all wines. Obtained by the night without any intervention. In the distant past, the Trasnocho of a wine determined the price of the other (cheaper) versions.

The Trasnocho is a blend of 90% Tempranillo, 5% Graciano and the remaining 5% comes from the (white) grapes Viura and Malvasia. In the winery of Remirez de Ganuza the grapes for the Trasnocho undergo a strict selection which again shows how quality-conscious but also how innovative Fernando is in making absolute top wine. All grapes are harvested by hand and the grapes are first brought to "rest" in the cold room for 24 hours. First is separation of the bottom and shoulders of each bunch. Only the "los hombros" or the shoulders (the upper part of the grape bunch) are used for the Trasnocho (and the other Reserva wines such as the because these are the ripest grapes that have seen the most sun and have the most beautiful tannins.

The Trasnocho is produced in a very innovative way with a wink to the past. For the Trasnocho they work with what they call the 'vino yema'. After the fermentation when the grapes are still in the cuvées the wine is pressed using a bag that has the exact shape of the cuvée. This is filled with lukewarm water and this bag is then slowly lowered into the cuvée which creates a very even and gentle pressing and in this way the best of the grape is released.

The Trasnocho has a purple almost black color with a bright purple edge. It feels young and needs time before it reveals itself but then something happens. The nose is very spicy, with notes of cinnamon and cloves, dark chocolate, ripe and very clean fruit, blueberries and cherries with a fresh spicy note that touches the nose. It develops beautiful floral notes of violets. The taste shows a very balanced wine, round, with very fine, sweet tannins. A beautifully designed modern Rioja that must mature slowly and gracefully. A creamy mushroom sauce with truffle oil emphasizes the earthy and ripe character of the wine. The soft texture of the pasta makes the whole harmonious and luxurious, without overpowering the wine.

5. Roast duck breast with cherry compote and balsamic vinegar
The fattiness and light gamey flavour of duck perfectly match the structure of the Trasnocho. The cherries and balsamic accentuate the fruity and fresh notes in the wine, which provides contrast and elegance.

6. Grilled tournedos with foie gras and red wine sauce
A classic among luxury pairings. The full, tender meat and the creamy foie gras enhance the concentration and elegance of the wine. The sauce rounds it all off with depth and length, perfect for a wine with refined tannins.

At the Remirez de Ganuza winery, the grapes undergo a strict selection, which also shows how quality-conscious but also how innovative Fernando is making absolute top wine. All grapes are harvested by hand and the grapes are first "rested" in the cooling chamber for 24 hours. First is separation from the bottom and shoulders of each cluster. Only the “los hombros” or the shoulders (the top part of the bunch of grapes) are used for his Reserva wines (Fincas de Ganuza, Remirez de Ganuza reserva and gran reserva and Trasnocho) because these are the most ripe grapes with the most sun seen.
