Description
The Recaredo Serral del Vell Brut nature Long Aged Cava is the full name. Elegance, Power and full of character is the short summary. The very calcareous soils and microclimate of the Serral del Vell plateau give each vintage an unmistakable character. The vineyards of Serral del Vell belong to the territory of Corpinnat, the birthplace of great sparkling wines in the historic wine-growing area of ​​the Penedès south of Barcelona, ​​​​where sparkling wine making began at the end of the 19th century according to the traditional method.
Single-estate character
The Serral del Vell is an area of ​​great beauty - an area full of Xarel·lo and Macabeu vineyards, where the imposing Montserrat mountain watches over a space very different topographically and geologically from the rest of its surroundings.
The Serral del Vell estate stands on a small plateau (serral) carved into the Bitlles Valley Highlands with winding gullies that flow into the Lavernó Gorge. The plateau has several large, gently sloping terraces that people have formed by constructing edges and slopes.
The Recaredo Serral del Vell is grown according to the principles of biodynamic agriculture, a step further than organic. The biodynamic approach allows Recaredo to create wines that are rich in nuances, have excellent aging potential and respect the landscape from which they come. The plant cover is allowed to grow spontaneously between the tendrils. These ground covers play a crucial role in loosening soil, regulating water retention and drainage (essential in an arid agricultural system) and helping to promote biodiversity. The harvest took place from August 12 to 19 with unusual speed: in just 18 days, all the family vineyards were harvested by hand.
The Serral del Vell is named after the place (paraje) where the grapes are grown. The Serral del Vell is a blend of 55% Xarello and 45% Macabeo forms. It also carries the new Paraje Calificado category to indicate that this is a unique cava. The soils are very rich in limestone, with 6% to 18% active limestone depending on the specific area. The wine that is aged in the bottle may do so in peace and quiet for a minimum of 5 years and 3 months (i.e. 63 months). It has a complex nose, with yeasty aromas and lots of balsamic, fennel, bay leaves and Mediterranean herbs. The taste is compact and balanced, with a lot of freshness and that characteristic bitterness of the Xarello. No sugars have been added (so a Brut Nature). The wine is certified organic, like all Recaredo wines, and is very low in sulfur. As an indication, this Serral del Vell (like all Recaredo wines) only has 35 mg/l of sulphite/sulfur dioxide, while 150 mg/l is the maximum amount allowed by the EU for organic white wines, so almost a factor of 4.5 lower. . ABOUT CORPINNAT
Recaredo is part of Corpinnat, which was founded in 2016 by a number of (high-end) producers who have distanced themselves from DO Cava mainly because no distinction can be made in quality in the CAVA model. All their wines are Brut Nature, and so is the 2017 Serral del Vell, a blend of 87% Xarel.lo and 13% Macabeo. For them, it was an earlier harvest but within the normal parameters. This is a single-vineyard wine from soils with a very high content of calcium carbonate (33% active limestone), which gives the wine a very lively palate with a clear salty twist. The first vintage of this wine was 2006 and was born with less Xarel.lo, but the percentage has grown over the years because it started with a more classical blend with close to 50% Macabeo. They look for the expression of the soil here, narrower and more direct, with more tension and with tons of elegance from the aging with the lees, very integrated and balanced, keeping the acidity. It developed an acute note of licorice with time in the glass. It was disgorged after 56 months sur lie, because demand outgrows supply. They have 47,000 bottles of this vintage, which should last them for two years, so the 2018 will have a longer aging in bottle when it's released.
Recaredo is one of the leading producers of sparkling wines, now under the collective brand Corpinnat (in the past, in the Cava DO), and since the 2017 vintage, it keeps moving in the direction to use only organic must to provoke the second fermentation in bottle, something they started working on in 2013. Of course, all their vineyards, 90 hectares, and wines (280,000 bottles) are certified organic and biodynamic, but they don't print the Demeter certification on the label because it has a very high cost.
Incredibly enough, they didn't export any wine in 2007, and today the export market only represents 20% of their volume. They are the best producer of sparkling wine from Spain.

The Mata family of Recaredo Cava has been making high-quality cavas since 1924. Their estate is situated in the Grand Cru area for Spanish cavas: Sant Sadurni d'Anoia, Vilobi de Penedes, Subirat and Torralavit in the Alt Penedes. The third, fourth and fifth generations are currently active in the company and still produce very high quality cava. Recaredo is a winery run by a family of winegrowers who specialize in high quality brut nature sparkling wines with the distinctive character resulting from long maturation and together with Mestres they are the absolute masters of Long-aged Cavas and are Parker compared to the Tondonias among the Cavas. After fermentation and assembling of the still wine, the bottles are filled and capped with a natural cork to disappear for a period of between 30 and 120 months in the beautiful cellars of Recaredo. Every 14 months the bottles are shaken and moved to 'move' the yeast present in the bottle. According to Ton Mata, this ensures a better development of the taste.
