2015 Equipo Navazos Colet Reserva Extra Brut
The joint venture with Equipo Navazos from Jerez, where Sergi Colet's sparkling wines from the Penedes are blended with the spirit of sherry through a small dosage of paolo cortado. Colet Navazos Extra Brut Reserve is a sparkling Penedés Cava prepared according to the traditional method (champenoise) with the second fermentation in the bottle. The bottles are refilled at Palo Cortado and Amontillado from the Jerez, when they are unaffected: they call it an oxidative sparkling. It has an unusual nose with aromas of roasted nuts and raisins and some smoky fleshy notes. The palate has handsome flavors with a sous-like note of tasty broth and clean, well-balanced acidity with lots of little bubbles bursting in your mouth. The COLET-NAVAZOS RESERVE Extra Brut has had a long maturation of 41 months. It is absolutely dry, with almost zero residual sugars. The wine has a beautiful pure fragrance, slightly oxidative, apple, almond and a fresh high acid after. The base wine comes from the Chardonnay with a southern contribution from Manzanilla Pasada and Manzanilla and this makes the Cava unique, subtle with a very personal character.
