Billecart-Salmon sources its grapes from vineyards in various sub-regions of Champagne. They use a significant proportion of Chardonnay, Pinot Noir, and Pinot Meunier in their Champagnes. The grapes are carefully pressed, and fermentation takes place in stainless steel tanks. They also emphasize a long aging process to develop the unique characteristics of their Champagnes. The art of blending is at the heart of Billecart-Salmon's production. Their cellar master, François Domi, plays a crucial role in crafting each cuvée with precision and consistency. The house is known for its low dosage levels, meaning their Champagnes tend to be drier and more focused on the fruit character and terroir.

Billecart-Salmon owns and manages vineyards in several key areas of the Champagne region. They have vineyards in Mareuil-sur-Aÿ, Aÿ, Avize, and other Grand Crus, allowing them to source high-quality grapes for their Champagnes. Billecart-Salmon produces a range of cuvées, each with its own unique characteristics and style. They produce a number of different types of Champagne, some of which are now openable, such as the Brut Rosé and the Brut Sous Bois. Champagnes made in specific vintages, such as the Nicolas Francois 2006 and the Elisabeth Salmon 2006, are also produced. They also produce Champagnes from single plots (Clos), such as the Clos-Saint-Hillaire, an extremely rare Champagne made from 100% Pinot Noir.

This Champagne is composed of 55% Pinot Noir from the Montagne de Reims and the Grande Vallée de la Marne. It is finished with 45% Chardonnay from the Côte des Blancs. Less than 10% of the Pinot Noir is vinified as red wine. The grapes for the red wine come from the old-vine "Valofroy" vineyard, located on the slopes of Mareuil-sur-Aÿ and benefiting from a south-facing exposure. The Champagne underwent partial malolactic fermentation and aged for 10 years on its lees. It has a radiant appearance, with a soft, coppery sheen and a lingering salmon-pink hue. The citrus peel and red berry jelly aromas create an exquisite sensation of rich and complex aromatic generosity. A measured power that is both delicate and charming, with the harmonious ripeness of mandarin, blood orange, and apple tart. A spacious and full character on the palate, with a chalky edge and a lingering finish of lemon peel and red and white berries.

Billecart Salmon History

The story begins with Nicolas François Billecart and Elisabeth Salmon, who started a small venture that has since grown into one of the best kept jewels of Champagne. Remarkably, the estate is still fully run by descendants of the founding family. No investors, no acquisitions, no industrial scale. Just generations following in each other’s footsteps with the same calm determination that defines the wines.

Early on, the family chose a winemaking approach where precision mattered more than speed. At a time when Champagne production was largely volume driven, they were already working with cooler fermentations and extended maturation.
