Description
Billecart-Salmon sources its grapes from vineyards in various sub-regions of Champagne. They use a significant proportion of Chardonnay, Pinot Noir, and Pinot Meunier in their Champagnes. The grapes are carefully pressed, and fermentation takes place in stainless steel tanks. They also emphasize a long aging process to develop the unique characteristics of their Champagnes. The art of blending is at the heart of Billecart-Salmon's production. Their cellar master, François Domi, plays a crucial role in crafting each cuvée with precision and consistency. The house is known for its low dosage levels, meaning their Champagnes tend to be drier and more focused on the fruit character and terroir.
Billecart-Salmon owns and manages vineyards in several key areas of the Champagne region. They have vineyards in Mareuil-sur-Aÿ, Aÿ, Avize, and other Grand Crus, allowing them to source high-quality grapes for their Champagnes. Billecart-Salmon produces a range of cuvées, each with its own unique characteristics and style. They produce a number of different types of Champagne, some of which are now openable, such as the Brut Rosé and the Brut Sous Bois. Champagnes made in specific vintages, such as the Nicolas Francois 2006 and the Elisabeth Salmon 2006, are also produced. They also produce Champagnes from single plots (Clos), such as the Clos-Saint-Hillaire, an extremely rare Champagne made from 100% Pinot Noir.
This Champagne is composed of 55% Pinot Noir from the Montagne de Reims and the Grande Vallée de la Marne. It is finished with 45% Chardonnay from the Côte des Blancs. Less than 10% of the Pinot Noir is vinified as red wine. The grapes for the red wine come from the old-vine "Valofroy" vineyard, located on the slopes of Mareuil-sur-Aÿ and benefiting from a south-facing exposure. The Champagne underwent partial malolactic fermentation and aged for 10 years on its lees. It has a radiant appearance, with a soft, coppery sheen and a lingering salmon-pink hue. The citrus peel and red berry jelly aromas create an exquisite sensation of rich and complex aromatic generosity. A measured power that is both delicate and charming, with the harmonious ripeness of mandarin, blood orange, and apple tart. A spacious and full character on the palate, with a chalky edge and a lingering finish of lemon peel and red and white berries.

A blend of 45% Pinot Noir and 55% Chardonnay, the 2012 Brut Rosé Cuvée Elisabeth Salmon is a real success, wafting from the glass with aromas of red berries, rose, peony, orange blood and dried flowers. Medium to full-bodied, vinous and broad, it's dense and deep with a multidimensional core of fruit, racy acids and a textural structure, concluding with a long, delicate, mouthwatering finish. This is one of the finest rosé I've tasted at this address. Kudos!
Billecart-Salmon’s style is characterized by elegance, purity and delicate freshness. Low fermentation temperatures are employed to preserve the purity and expressiveness of the fruit, while malolactic fermentation is systematically blocked to maintain the wine’s vibrant acidity. Since Mathieu Roland-Billecart’s arrival in 2018, the estate has expanded its barrel program, focusing on the best terroirs for cuvées like Brut Réserve and Brut Sous Bois, and has initiated biodynamic viticulture in Le Clos Saint-Hilaire.

Billecart-Salmon Champagne Cuvée Elisabeth Salmon Brut Rosé 2012
Tuesday, Nov 21, 2023
Color: Sparkling
Country: France
Region: Champagne
Vintage: 2012
This has a lovely copper color with aromas of cloves, spiced apples, raspberries, gingerbread and pastries. Delicious yeasty and spicy undertones. Excellent density and focus, with fine and firm bubbles, yet it’s light on its feet and so fresh. Long, chalky and salty at the end. Chardonnay and pinot noir. 3.8g/L dosage. Drink or hold.

From: 2025 Champagne: New Releases (Updated Nov 2025) (Apr 2025)
The 2012 Brut Rosé Cuvée Elisabeth Salmon is a very sexy Champagne, but it is also quite reserved, especially within the context of the year. Crushed rose petal, kirsch, white pepper, slate and mint are all beautifully delineated in a sculpted, taut Rosé. Its finest drinking belongs to the future. Dosage is 3.8 grams per liter. Disgorged: January 2023.

The significant increase in quality at Billecart-Salmon is no longer news, but it’s still worth mentioning. Quite simply, the Champagnes here have never been better. Of course, the flagship wines are terrific, but the biggest changes are at the other end of the spectrum, among the entry-level offerings. Only a few years ago, I felt these wines were so ordinary that I rarely included them in this report. To say that is no longer the case is an understatement.

The 2012 Brut Rosé Cuvée Elizabeth Salmon offers up hints of red berry fruit, ginger, spice, rosewater, mint and crushed flowers. There is a feeling of classic austerity that runs through the 2012. I would prefer to cellar this for at least a few years, as it is quite reticent at this stage. Chalk, mint, white pepper and bright saline accents linger on the pointed finish. Dosage is 3.8 grams per liter. Disgorged: first trimester 2023.

Mathieu Roland-Billecart continues to forge his own path at the family’s estate. Under his thoughtful leadership, today Billecart-Salmon offers a decidedly contemporary view of what Champagne is and what it can be. There is a great focus on quality, that is evident. Separately, dosage has come down significantly, as much as 50% for some wines, including the Brut Rosé, the Champagne that, for me, most identifies the house in broad terms. The production cycle in Champagne from concept to finished wine takes years, far longer than almost any other wine region in the world. For that reason, there is every reason the best is yet to come.

Billecart Salmon is a house that radiates elegance while staying firmly rooted in the chalky soils it calls home. Since 1818, the same family in Mareuil sur Aÿ has crafted Champagne that blends freshness with finesse. Tradition here is not a museum piece, but a living part of every new vintage.
Billecart Salmon History
The story begins with Nicolas François Billecart and Elisabeth Salmon, who started a small venture that has since grown into one of the best kept jewels of Champagne. Remarkably, the estate is still fully run by descendants of the founding family. No investors, no acquisitions, no industrial scale. Just generations following in each other’s footsteps with the same calm determination that defines the wines.
Early on, the family chose a winemaking approach where precision mattered more than speed. At a time when Champagne production was largely volume driven, they were already working with cooler fermentations and extended maturation. It resulted in a style that has remained soft, lively and unmistakable.
Terroir of Billecart Salmon
Mareuil sur Aÿ is blessed with soils that act almost like a natural cellar master. Layers of chalk retain moisture, cool the roots and give that signature tension that enthusiasts recognize in a single sip. The family works with vineyards in Premier Cru and Grand Cru villages that have been tended by the same growers for generations. Some parcels are so consistently cultivated that it almost feels as if the grapes know exactly what is expected of them.
Their blends rely heavily on Chardonnay, Pinot Noir and Pinot Meunier. The combination of structure, brightness and depth makes the base wines distinctive even before the bubbles appear.
Winemaking at Billecart Salmon
The work in the cellar is calm, precise and patient. Fermentation takes place at low temperatures, allowing aromas to develop slowly. This keeps the wines fresh and pure. It may sound technical, but it is mostly a matter of patience. And that patience pays off in every glass.
Using both stainless steel and oak brings extra layers without heaviness. The family believes Champagne should dance, not march. You taste that energy immediately: vibrant fruit, fine acidity and a mousse that feels almost silky.
Billecart Salmon Style and Ageing Potential
Anyone who thinks elegant Champagne cannot age has never seen Billecart Salmon at its best. Some bottles gain new layers for decades while remaining astonishingly fresh. It is almost their signature. The balance between vibrancy and softness allows these wines to mature beautifully, sometimes so impressively that you wonder why you ever drank them young.
These wines clearly show that Billecart Salmon shines not only today, but also after long cellaring. With age, they develop deeper character and grace, ranking among the most impressive mature Champagnes we have encountered.
Why Billecart Salmon Stands Out
The distinctive style, the uninterrupted family story and the quiet dedication to quality make this house remarkable. The wines are light-footed, precise and yet complex enough to hold your attention until the last sip. You taste not only craftsmanship, but also the calm rhythm of a house that has never joined the rush of the outside world.
And in a world full of mergers and flashy marketing, it is comforting that one family still works from Mareuil sur Aÿ just as they have done for more than two hundred years.
