In 1584, Pierre Gosset, alderman of Aÿ and wine grower, made mainly red, still wines from the harvest of his own vineyards. This makes Gosset the oldest winery in Champagne. However, in the 18th century, the production of still wines made in and around Aÿ changed to sparkling. Malolactic fermentation is carefully avoided in order to preserve the malic acid, which provides the natural fruity aromas. Gosset assembles the best Crus of the Marne district (Grand Crus and Premier Crus), with an average classification of 95% on the official Cru scale ("échelle des crus").

The 2008 Extra-Brut Celebris has been matured for almost 14 years before being released. The Gosset Champagne Celebris Vintage Extra Brut is a blend of two key players in champagne: Chardonnay and Pinot Noir. This Gosset presents itself beautifully from the start, with sweet aromas of citrus oil, dried white flowers, warm biscuits and nougat, complemented by hints of dried fruit that will continue to develop in the future. This champagne is medium to full-bodied, lively and layered, with a firm fruit core surrounded by spicy acidity and a long, penetrating finish. The typical austere style of the house is combined here with a remarkable fullness and depth. This 2008 vintage is a beautiful example of the complexity and refinement that Gosset is known for, with an impressive balance between freshness and ripe flavours.

At that time, champagne as we know it did not yet exist. Gosset sold a still, mostly red wine made from the grapes from its own vineyards. Champagne and wine from Beaune in Burgundy competed for the favor of the French kings at the time. When, thanks to the invention of Dom Pérignon, sparkling champagne could be made and sold in bottles, the house of Gosset also became involved in the production of white sparkling champagne. And in the 18th century the production of still wines made in and around Aÿ changed to bubbles. Malolactic fermentation is carefully avoided in order to preserve the malic acid, which provides the natural fruity aromas.
