Champagne Billecart-Salmon Nicolas François is a prestige champagne produced since 1964 by the champagne house Billecart-Salmon, one of the most renowned producers in the Champagne region. The Nicolas François 2008 was allowed to mature in the cellars of Billecart-Salmon until 2023, making them the last of the major houses to release their 2008 prestige champagne. Nicolas François is named after the co-founder of the house, Nicolas François Billecart, and is a tribute to his vision and dedication to making excellent champagnes. This champagne is only produced in exceptional vintages, when the grapes (Grands crus and Premier crus) are of exceptional quality.
The Billecart-Salmon Les Rendez-Vous No. 3 is a special champagne that celebrates the unique characteristics of the Pinot Meunier grape. This cuvée is part of the "Les Rendez-Vous de Billecart-Salmon" series, in which the house experiments with specific grape varieties and terroirs to offer unique tasting experiences.
This champagne is composed of grapes from three historic villages: Leuvrigny, Festigny and Venteuil, located in the heart of the Vallée de la Marne. The wine is vinified in stainless steel tanks and then matured sur lattes (on the yeasts) for 64 months, which contributes to the complexity and depth of the flavour. The blend is composed of 70% base wine from 2015 and 30% reserve wines from 2013. The dosage is low, at only 2 g/l, resulting in an Extra Brut style that emphasises the purity and freshness of the wine.
Colour: A bright, golden yellow shade with silver reflections and a fine, persistent mousse.
Nose: Delicate floral aromas of lime blossom and freshly cut grass, combined with summery scents of grain and straw. These scents are complemented by fresh fruity notes and juicy citrus fruits, resulting in a refined and complex aromatic profile.
Taste: A sensual texture with rich, fruity flavours such as white cherry, pineapple and yellow plum. The wine has a refreshing acidity and a long finish with subtle hints of white pepper and a pleasant freshness of yellow fruit.
Les Rendez-Vous No. 3 is best served at a serving temperature of 10-12°C. This champagne is an excellent accompaniment to refined dishes such as a veal and foie gras pie or a Bresse pate en croûte. The complexity and freshness of the wine harmonise beautifully with the rich flavours of these dishes.
