The distinctive style of Billecart-Salmon champagne is thanks to Jean Roland-Billecart. In the late 1950s, he introduced a fermentation method that, among other things, keeps the temperature below 13°C. This slows the fermentation process, allowing all the delicate aromas to fully develop. The subsequent long aging on the lees (the sediment) gives the wine unique clarity and purity. The result is fresh champagnes with great finesse and delicate bubbles. It's no wonder Billecart-Salmon is among the top ten most highly regarded champagnes and a favorite of sommeliers in top gastronomic restaurants.

It's hard not to rave about Billecart-Salmon champagnes. This tantalizing Blanc de Blancs is no exception. This cuvée is crafted from the four Grand Cru vineyards of the Côte des Blancs: Avize, Chouilly, Cramant, and Mesnil-sur-Oger. A blend of two different vintages, it reveals the exceptional quality of the Chardonnay. Its complexity, high vinosity, and surprisingly fresh finish are especially appreciated by the most knowledgeable wine lovers. The Billecart-Salmon - Blanc de Blancs Grand Cru boasts delicate bubbles with a surprising nose of almond and fresh fruit like apple and pear. The palate is delightfully lively with beautiful depth. The first time I tasted a cuvée from Maison Billecart-Salmon, it was on my 20th birthday. A day that I will never forget! More often than not I taste the Blanc de Blancs Grand Cru cuvée from magnum. The 100% Chardonnay fully reveals itself in this format. I like the mineral aspect which is taut, vivid and with a slight richness. A perfect balance between delicacy and elegance with a finish that is strengthened by the minerality. In Saint Placide, we propose a smoked salt turbot. The natural flavor of the turbot and the contrast with the smoked salt is revealed by the finesse and the persistence on the palate. For me, any place is perfect for tasting the Blanc de Blancs Grand Cru. Saint-Malo, for a simple picnic away from it all except for the pleasures of that exactly instant. A moment that is just magic.

Billecart Salmon History

The story begins with Nicolas François Billecart and Elisabeth Salmon, who started a small venture that has since grown into one of the best kept jewels of Champagne. Remarkably, the estate is still fully run by descendants of the founding family. No investors, no acquisitions, no industrial scale. Just generations following in each other’s footsteps with the same calm determination that defines the wines.

Early on, the family chose a winemaking approach where precision mattered more than speed. At a time when Champagne production was largely volume driven, they were already working with cooler fermentations and extended maturation. It resulted in a style that has remained soft, lively and unmistakable.

Terroir of Billecart Salmon

Mareuil sur Aÿ is blessed with soils that act almost like a natural cellar master. Layers of chalk retain moisture, cool the roots and give that signature tension that enthusiasts recognize in a single sip.
