Description
The distinctive style of Billecart-Salmon champagne is thanks to Jean Roland-Billecart. In the late 1950s, he introduced a fermentation method that, among other things, keeps the temperature below 13°C. This slows the fermentation process, allowing all the delicate aromas to fully develop. The subsequent long aging on the lees (the sediment) gives the wine unique clarity and purity. The result is fresh champagnes with great finesse and delicate bubbles. It's no wonder Billecart-Salmon is among the top ten most highly regarded champagnes and a favorite of sommeliers in top gastronomic restaurants.

A 100% Chardonnay, sourced from vines planted in the communes of Mesnil-sur-Oger, Chouilly, Cramant, and Oiry, the 2012 Brut Blanc de Blancs Cuvée Louis Salmon evokes aromas of lemon oil, pastry, baked bread, walnuts and chalk. Medium to full-bodied, deep and seamless, it's vinous, almost creamy, with a layered, delicate structure that leads to a delicately citrusy, long and delicate finish. This Champagne is built to age, thanks to the power of the 2012 vintage and the house's signature tension. Disgorged in the second quarter of 2023 with 3.9 grams per liter dosage, it was matured 75% in stainless steel and 25% in barrels.
Billecart-Salmon’s style is characterized by elegance, purity and delicate freshness. Low fermentation temperatures are employed to preserve the purity and expressiveness of the fruit, while malolactic fermentation is systematically blocked to maintain the wine’s vibrant acidity. Since Mathieu Roland-Billecart’s arrival in 2018, the estate has expanded its barrel program, focusing on the best terroirs for cuvées like Brut Réserve and Brut Sous Bois, and has initiated biodynamic viticulture in Le Clos Saint-Hilaire.
