A Passito or also called Dolce is an Italian dessert wine. Only a handful of bottles are made from the Passito Mel by Antonio Caggiano, and Mel is honey and translates well. The Mel is a blend Fiano di Avellino 70% Greco di Tufo 30% The grapes are dried on grates after the late harvest and are then pressed months later. The moisture has disappeared and what remains is only sweet flesh from the now very dried-up grapes. The must is then fermented and aged for twelve months in barriques. The wine has a golden yellow color. Sweet with a lasting aftertaste of honey, dried apricot and candied citrus but with a very nice freshness. Another nice thing about this dessert wine is that it is not an alcohol bomb as we often see with dessert wines. This is a great dessert wine with a wonderful Price / Quality but in short this is also from Antonio Caggiano
