Château Pavie 2025 undoubtedly ranks among the absolute stars of Bordeaux 2025. This Premier Grand Cru Classé from Saint-Émilion combines the power and concentration for which Pavie is known with striking precision, freshness, and elegance. Moreover, the vintage marks a historic moment: for the first time, Cabernet Franc is the dominant grape variety in the grand vin. The result is a wine with enormous depth, exceptional tension, and impressive aging potential.

Winery Château Pavie

Château Pavie is one of the most prestigious estates in Saint-Émilion and holds the status of Premier Grand Cru Classé. The estate is situated on the famous south-facing slopes southeast of the historic town of Saint-Émilion and comprises 42 hectares of vineyards. Since Gérard Perse took over the château in 1998, substantial investments have been made in both the vineyard and the cellar, definitively bringing Pavie back to the absolute top of Bordeaux.

The vineyards are distributed across three distinct terroirs. Two-thirds are located on the limestone plateau of Saint-Émilion; additionally, Pavie owns plots on the sunny Côte Pavie and at the foot of the slope where sandy and gravelly soils prevail. This combination of terroirs gives the wine its unique blend of power, complexity, and finesse.

2025 vintage at Château Pavie

The 2025 growing season was characterized by warm and dry conditions, interspersed with several key weather moments. Thanks to the excellent health of the grapes and the natural regulating effect of the terroir, exceptional balances could be achieved. The château itself speaks of a wine that is simultaneously rich and concentrated, but also possesses tension, refinement, and precision.

For the first time in the history of Château Pavie, Cabernet Franc takes center stage. According to the technical team, this ensures a perfect balance between intensity and freshness. The harvest took place between September 15 and 26 and yielded only 21 hectoliters per hectare, which further increased the concentration.

Cabernet Franc makes history

The blend of Château Pavie 2025 consists of 60% Cabernet Franc, 30% Merlot, and 10% Cabernet Sauvignon. Never before has Cabernet Franc played such a dominant role within Pavie's grand vin. While older vintages were sometimes characterized by powerful extraction and immense concentration, 2025 reveals a new dimension where precision, aromatic refinement, and tension take center stage.

James Suckling calls it "the most Cabernet Franc-driven Pavie ever" and sums up the wine with one word: precision. Antonio Galloni also emphasizes that the wine still possesses the texture and intensity that made Pavie great, but with more finesse and less heavy extraction than in previous generations.

Vinification and aging

The grapes are harvested entirely by hand and rigorously selected. Fermentation takes place in temperature-controlled wooden vats, followed by malolactic fermentation in barrels. Subsequently, the wine ages in 65% new French oak barrels and 35% one-year-old barrels. This approach ensures extra depth and structure without overpowering the character of the terroir.

Color, smell and taste

Château Pavie 2025 presents a deep, almost opaque ruby red color. On the nose, layers of blackcurrant, cassis, black cherry, pomegranate, violets, and exotic spices follow one another. Behind these, notes of espresso, cocoa, mocha, orange peel, cedarwood, and subtle mineral accents emerge.

The taste is impressively concentrated yet remarkably refined. Dark fruit, spices, cocoa, and graphite are supported by a powerful yet perfectly integrated tannin structure. The wine possesses tremendous depth, energy, and length, while the Cabernet Franc provides lift, freshness, and aromatic precision. Despite its richness, everything remains remarkably harmonious and elegant. The finish lingers for minutes with notes of dark fruit, chalky minerality, and refined spices.

Reviews from the international wine press

Antonio Galloni of Vinous rates the wine 96-98 points and calls it a "total stunner". According to Galloni, the wine has a tremendous future and will need at least a decade to fully open up. Falstaff awards 98 points and praises the combination of power, freshness, ripe tannins, and terroir expression.

The international ratings are impressive. James Suckling gives 98-99 points, Yves Beck even 98-100 points, and Vinum awards the wine 99 points. Jane Anson rates Château Pavie 98 points and speaks of exceptional length and a beautiful oyster-shell-like minerality in the finish. Bettane & Desseauve calls Pavie one of the highlights of the entire vintage.

Perse did not shy away from innovation. He was initially criticized for his unconventional methods—such as green harvesting, removing unripe grape clusters to improve quality—which traditional Saint-Émilion producers viewed as wasteful. But his methods paid off. Today, many winemakers follow his lead, and Château Pavie is firmly established among Bordeaux’s elite.
