Description
Pecorino cultivation had nearly disappeared due to its very low production and previously lower quality. In 2005, Umani Ronchi and Velenosi took the initiative to give these native varieties the place they deserve. Thanks to much dedication and love, Pecorino is once again at the top of the podium in Abruzzo. The name of the Pecorino grape variety, also known as "grape of the sheep," derives from the strong connection between sheep farming and agriculture and the presence of this grape variety in the shepherds' lands. Vellodoro refers to the sheep's golden fleece.
Pecorino is currently considered a special, original wine with yellow fruit and a distinct mineral note. The grape's history, with its 80-year disappearance, is truly remarkable, and the Marche region can rightly be proud of the resurgence of Pecorino wine on the market.
The Pecorino grapes are hand-picked early in the morning or late in the afternoon and placed in small containers, which are then stored in cold rooms before being transported to the winery. After the harvest in mid-September, the grapes are carefully selected; after gentle pressing, the temperature is immediately lowered, and fermentation always takes place in temperature-controlled (14-15°C) stainless steel vats. The wine ages until February/March at a temperature of around 10°C to develop its beautiful aromas.
In the glass, the Umani Ronchi Pecorino Terre di Chieti has an intense and radiant straw yellow color. On the nose, the wine is pleasant with aromas of exotic fruit, a floral bouquet of hawthorn, acacia, with hints of boxwood, apple, and citrus. On the palate, the fresh aroma of the Pecorino is particularly noticeable. A delicious wine with its characteristic high concentration of aromas and wonderful acidity.
