Winery

Domaine Sylvain Morey is one of the most interesting addresses in Chassagne-Montrachet. Sylvain Morey grew up in a well-known wine family and worked at the family estate for many years before founding his own winery in 2014. Since then, he has quickly built a strong reputation with wines that excel in precision, purity, and terroir expression. Although Chassagne-Montrachet is primarily known for white wine, Sylvain Morey also demonstrates the seriousness with which the estate operates with Pinot Noir. His red wines are refined, transparent, and clearly rooted in their origins. You can find more information about this winery in the Winery tab.

Origin and terroir

Chassagne-Montrachet is located in the southern part of the Côte de Beaune and is primarily known for its great white wines, but Pinot Noir also feels right at home here. The soils consist of a combination of limestone, clay, and stony subsoil, which provides tension, structure, and refined minerality. Red Chassagne-Montrachet often has slightly more depth and earthy grip than, for example, red Santenay or Maranges, while simultaneously retaining a Burgundian elegance. This makes this appellation particularly interesting for lovers of classic Pinot Noir.

Grapes and vineyard management

This wine is made from 100% Pinot Noir. In the vineyards, Sylvain Morey works with great attention to healthy grapes, balanced yields, and meticulous selection during the harvest. Pinot Noir demands precision, especially in a terroir like Chassagne-Montrachet, where freshness and structure are closely intertwined. Through careful leaf management and a focus on ripe but not overripe fruit, the wine remains true to its origins and retains its lively character.

Vinification and aging

After the harvest, the grapes are carefully selected and vinified with the aim of preserving the finesse of the Pinot Noir. Extraction is generally kept under control so that the wine does not develop a heavy or harsh structure. Subsequently, the wine ages in French oak barrels, where the maturation is primarily focused on refinement and texture. During this period, sur lie aging contributes to extra depth and a beautifully integrated structure. The wood remains supportive, giving the wine just a little more complexity without overpowering the fruit.

Color, smell and taste

In the glass, the wine displays a bright ruby red color. The aroma opens with red cherries, raspberries, and wild strawberry, followed by floral notes, fine herbs, and a subtle earthy undertone. As the wine opens up, nuances of forest floor, spices, and a light minerality also emerge. On the palate, the wine is supple yet refined in structure, with fresh acidity, fine tannins, and a beautiful balance between juicy red fruit and Burgundian tension. The finish is elegant, clean, and lightly spicy.

Style and character

This red Chassagne-Montrachet clearly demonstrates that the appellation has more to offer than just white wine. The style is refined, transparent, and classically Burgundian, with more emphasis on finesse than on power. At the same time, the wine possesses sufficient depth and grip to perform excellently at the table as well. It is a Pinot Noir for lovers of tension, freshness, and terroir expression, not of overripeness or excessive oak influence.

Volume

The 2024 vintage seems to align well with the style of Pinot Noir that Sylvain Morey likes to produce. In a classic Burgundian year, freshness, aromatic precision, and a more linear structure often come to the fore beautifully. This can result in red wines with bright red fruit, fine acidity, and an elegant tannin structure. The expected drinking window runs from 2027 to 2033.

Food and wine pairings

This red Chassagne-Montrachet pairs excellently with veal, duck, guinea fowl, mushrooms, and dishes with roasted vegetables. Tuna, poultry with a light jus, or a classic coq au vin also complement the wine's refined style beautifully. Moreover, thanks to its fresh acidity and elegant structure, this is a truly gastronomic Pinot Noir.

Sylvain Morey is the son of Jean-Marc Morey from Chassagne-Montrachet, whose wines adorned our range for many years. After Jean-Marc's retirement In 2014, the vineyard plots were divided between Sylvan and his sister Caroline.

The driven Sylvain left Burgundy much earlier, determined to find his own way and had founded a wine estate in the Luberon, much further south. His experience on this own project, combined with the deep knowledge he gained from his father, has made Sylvain a thoughtful yet confident winemaker, one who respects the traditional way his father worked, but also brings out his own sensibility. He immediately planned to split his time between Chassagne and Luberon and keep the same cellar where his father has always worked. With his first releases in 2014, his mark on the wines is clear. The wines have a little more power than those of his father, are richer in structure but have retained the substantial mineral side. Sylvain's Burgundian heritage really shows his high standards of production. Harvests here can be quite late due to the cooler and relatively dry climate. All the fruit for Sylvain's wines is harvested by hand, with a strict selection made in the vineyards. Fermentations for both white and red are allowed to start spontaneously with native yeasts. He tries to make a soft extraction for the red wines with minimal remontages and no pigeage (stirring the must). Once fermentation is complete, the wines are aged in various sized barrels or concrete tanks before bottling with only minimal filtration when required.
