Winery
Domaine Sylvain Morey is a relatively young estate with deep roots in Chassagne-Montrachet. Sylvain Morey comes from a well-known wine family and worked at the family estate for many years before starting his own project in 2014. Since then, he has rapidly built a strong reputation with wines that excel in precision, balance, and terroir expression. His style is refined rather than exuberant, with a strong focus on tension, purity, and texture. This makes his white Burgundies particularly interesting for enthusiasts seeking finesse and classic structure. You can find more information about this winery in the Winery tab.
Origin and terroir
Chassagne-Montrachet is located in the southern part of the Côte de Beaune and is one of the great villages of White Burgundy. The appellation is known for its chalky soils of clay, stone, and marl, which produce Chardonnay wines with both breadth and tension. In Chassagne-Montrachet, the wines often acquire slightly more structure and earthy depth than in, for example, Puligny-Montrachet, while still retaining a beautiful freshness and minerality. For a producer like Sylvain Morey, this is a terroir that suits a precise, layered style perfectly.
Grapes and vineyard management
This wine is made from 100% Chardonnay. In the vineyards, Sylvain Morey works with great attention to healthy grapes, balanced yields, and the purest possible translation of the terroir. Through precise leaf management and careful fruit selection, freshness is preserved, while the grapes develop sufficient ripeness to give the wine depth and length. That combination of ripeness and tension is a key characteristic of the estate's style.
Vinification and aging
After the harvest, the grapes are carefully pressed and vinified with the aim of preserving both the aromatic finesse and the texture of Chardonnay. Fermentation takes place with great attention to detail, after which the wine matures further on the fine lees. This sur lie aging lends extra depth, tension, and creaminess to the wine. With a winemaker like Sylvain Morey, wood typically remains supportive rather than dominant, ensuring that the origin and freshness of the wine remain central.
Color, smell and taste
In the glass, the wine displays a bright golden-yellow color. The aroma opens with citrus, white peach, ripe apple, and white flowers, followed by subtle notes of almond, brioche, and wet stone. On the palate, the wine is refined but certainly not light. The initial taste is fresh and precise, followed by a layered texture featuring ripe stone fruit, a light creaminess, and distinct mineral tension. The finish is long, clean, and classic Chassagne-Montrachet, possessing both elegance and grip.
Style and character
This Chassagne-Montrachet Blanc fits well within Sylvain Morey's style: refined, pure, and built on tension. The wine combines the breadth and structure so characteristic of Chassagne with modern precision and a subtle use of oak. The result is a white Burgundy that already possesses great charm, yet has sufficient substance to develop further in the bottle.
Volume
The 2024 vintage seems to align well with the style of Sylvain Morey and the character of Chassagne-Montrachet. In a classic Burgundian year, Chardonnay from this appellation can display great tension, freshness, and terroir expression. This typically results in wines with a beautiful balance between ripe fruit, lively acidity, and mineral length. The expected drinking window runs from 2027 to 2033.
Food and wine pairings
This Chassagne-Montrachet pairs excellently with turbot, sea bass, scallops, lobster, and poultry with creamy sauces. Veal, mushroom risotto, and dishes with a subtle buttery note also match beautifully. Thanks to its tension and structure, this is a wine that holds its own well with both refined fish dishes and richer preparations.

Sylvain Morey is the son of Jean-Marc Morey from Chassagne-Montrachet, whose wines adorned our range for many years. After Jean-Marc's retirement In 2014, the vineyard plots were divided between Sylvan and his sister Caroline.
The driven Sylvain left Burgundy much earlier, determined to find his own way and had founded a wine estate in the Luberon, much further south. His experience on this own project, combined with the deep knowledge he gained from his father, has made Sylvain a thoughtful yet confident winemaker, one who respects the traditional way his father worked, but also brings out his own sensibility. He immediately planned to split his time between Chassagne and Luberon and keep the same cellar where his father has always worked. With his first releases in 2014, his mark on the wines is clear. The wines have a little more power than those of his father, are richer in structure but have retained the substantial mineral side. Sylvain's Burgundian heritage really shows his high standards of production. Harvests here can be quite late due to the cooler and relatively dry climate. All the fruit for Sylvain's wines is harvested by hand, with a strict selection made in the vineyards. Fermentations for both white and red are allowed to start spontaneously with native yeasts. He tries to make a soft extraction for the red wines with minimal remontages and no pigeage (stirring the must). Once fermentation is complete, the wines are aged in various sized barrels or concrete tanks before bottling with only minimal filtration when required.
