History of the L'Aventure winery
The 2021 L’Aventure Optimus is the result of the visionary approach of French winemaker Stephan Asseo in Paso Robles, California. After 17 years of experience in Bordeaux winemaking, Asseo chose Paso Robles for his next adventure, driven by the freedom to venture beyond traditional appellation boundaries. This decision led to the creation of L’Aventure Optimus, an expressive blend that embodies the unique terroir of Paso Robles.
About the L'aventure Optimus 2021
Paso Robles: The 'Rhone' of California
As a pioneer in winemaking, Stephan Asseo emphasizes the importance of creativity and innovation in Paso Robles. L'Aventure benefits from a unique terroir, consisting of gravelly and calcareous soils on rolling hills, which contributes to the expressiveness and complexity of the wine. The 16-month aging in a mix of new and one-year-old French oak enhances the structure and adds subtle vanilla notes without overwhelming the purity of the fruit.
Despite the challenges of high alcohol levels, Paso Robles producers like L’Aventure are able to create wines that are both fresh and balanced. Stephan Asseo’s emphasis on the ripeness of polyphenols, rather than just sugar levels, reflects his dedication to quality and his pursuit of a wine that captures the essence of Paso Robles. Stephan Asseo's dedication to L'aventure
Stephan Asseo’s dedication to quality has earned L’Aventure worldwide recognition, with very high ratings and even a few perfect scores over the past decade. Despite its accessible price point compared to the cult wines of Napa, the 2021 Optimus remains a rare find, with production representing only 10% of the harvest, distributed exclusively by just three négociants in Bordeaux. With a aging potential of more than 10 years, the 2021 L’Aventure Optimus promises to evolve and mature, increasing in complexity and depth over time. An expression of Asseo’s mastery and the unique terroir of Paso Robles, this wine guarantees a memorable tasting experience

The 2021 Optimus is an elegant, polished blend of 55% Syrah, 27% Cabernet Sauvignon and 18% Petit Verdot. It takes plenty of air to reveal maraschino cherry, blueberry, leather, aniseed, gravel dust and garrigue aromas. The full-bodied palate offers expansive, spicy fruit framed by powdery tannins and focused acidity, and it has a long, latent finish. It will benefit from 3-5 years in bottle.

From: In the Sweet Spot: Paso Robles 2023s and 2024s (Apr 2026)
The 2023 Optimus is bright and vibrant, with a burst of crushed raspberries, sweet sage, nuances of exotic spice and pine shavings. Silken yet spry, it races across the palate with rose-laced red berry fruit and a licorice tinge. Edgy tannins resonate, offset by a residual bump of brisk acidity as the 2023 finishes long yet remarkably fresh. This is deceptively approachable today, yet also built for the cellar.

I requested a mini-vertical during my visit to L'Aventure to get a fuller picture of how these wines age. Winemaker Stephan Asseo, along with his daughter and General Manager, Chloé Asseo-Fabre, shared two six-vintage verticals of the Côte à Côte and Estate Cuvée (now called the Estate Reserve). In both cases, we tasted through the 2008-2013 vintages. I’m happy to say that each vintage’s character came through in the wines, which is a priority for Asseo. In a region where ripeness can sometimes overwhelm terroir and vintage, Asseo strives for transparency, which is evident here. I also witnessed a steady decline in total alcohol levels, with the earliest vintages of Côte à Côte in the 16+% range and the Estate Cuvée around 15.9%. Even those wines showed the balance that L'Aventure has mastered. However, the wines are generally better today than they were in the past. Part of this has to do with a less aggressive oak regimen. The Estate Cuvée (Estate Reserve) is down to 85% new oak with the 2023 vintage. The new releases are gorgeous. The 2023 Chloé, which in recent vintages has been leaning toward a fresher style, is still balanced but structured, intense and built for the long haul. The For Her, a co-fermented blend of 58% Syrah, 30% Graciano and 12% Viognier, is the wine of the vintage for L'Aventure. This remains one of the absolute top estates in the region—a well-deserved reputation.

Stephan Asseo, owner and winemaker at L'Aventure Winery, started making wine in 1982, after his education at L'Ecole Oenologique de Macon, Bourgogne, France. In the same year, Stephan founded Domaine de Courteillac in Bordeaux. He and his family later bought Chateau Fleur Cardinal and Chateau Robin in the Cotes de Castillion, Bordeaux. Over the next 15 years, Stephan developed into an artisan winemaker with exacting craftsmanship and gained a reputation as a "maverick winemaker". However, his true desire was to be more innovative than AOC law would allow. This led him, his wife Beatrice and his three children, including his daughter Chloé, on a 1996 search for a great terroir, where he could pursue his ideal as a winemaker. After searching for over a year among the world's greatest wine fields, ranging from South Africa to Lebanon, from Argentina to Napa, they found Paso Robles. Stephan and Beatrice instantly "fell in love" with the unique terroir of west side Paso Robles. The rolling topography of the Santa Lucia Mountains, the deep calcareous soils and the maritime influences of the famous Templeton Gap combine to create a world-class wine country, with the potential to make some of the world's finest blends. Here, in Paso Robles, Stephan and his family started their adventure "L'Aventure" in 1998.
The spirit of L'Aventure is most apparent in Stephan's "Paso Blends", such as Optimus and Estate Cuvée. Both wines are blends of Syrah / Cabernet Sauvignon / Petit Verdot. In these wines, as well as in our Rhône blend Côte à Côte, the blending of premium grape varieties increases the authenticity, complexity and balance of the wines. In this adventurous spirit we find the future of Paso Robles wines...great, well-balanced red blends.
