This relatively small estate is located in the tiny village of Puligny – Montrachet. Gérard Boudot is married to the granddaughter of Etienne Sauzet and has been running the estate since 1974. Little by little he managed to rediscover the typicity of the different terroirs and for the last ten years he has been making magnificent Puligny's. He now works together with his daughter. Gérard Boudot gets the concentration of his wines from a harvest that is picked as late as possible and healthily. He obtains the finesse and the characteristic elegance through his slow vinification. This harmony can be found in both his regular Chardonnay and in his Grand Crus, each with the very typical terroir nuances. These wines have become world-famous and almost impossible to find.

Domaine Etienne belongs to the absolute top of Burgundy and its white Burgundy hardly needs any introduction. The Domaine Sauzet Bourgogne Chardonnay has the great advantage over its bigger brothers that it does not need to be aged for years before it is ready to drink (and is also more friendly in terms of price). Round and very seductive with a fruity nose with aromas of fresh pear and plenty of citrus nuances. The bouquet expands with a ripe mix of apple, mandarin, a hint of almond, vanilla and baked bread and a soft floral tone. In the mouth the wine is deep, full, juicy with a good balance and respectable crispy acids in an open finish.

  • Grilled salmon with lemon butter sauce
The creaminess of the butter sauce perfectly complements the subtle wood tones of the wine, while the fatty character of the salmon contrasts nicely with the fresh acidity of the Chardonnay.

  • Chicken in a creamy tarragon-mustard sauce
The wine has enough structure to hold its own next to the spicy and creamy sauce, and the fresh acidity keeps the dish lively.

  • Baked scallops with cauliflower puree
The soft, sweet flavour of the scallops is beautifully refreshed by the lively acidity of the wine, while the cauliflower puree forms a gentle bridge between wine and dish.

  • White asparagus with hollandaise sauce and ham
The wine harmonises beautifully with the slightly bitter asparagus and the creamy sauce, while the saltiness of the ham provides a nice counterpoint to the minerality in the wine.

  • Risotto with lemon, peas and Parmesan cheese
The fresh citrus notes of the wine enhance the lemon in the risotto, while the creamy texture of the dish pairs beautifully with the soft woody influences of the wine.

  • Langoustine tartare with yuzu and avocado cream
A refined dish that underlines the elegance of the wine. The yuzu complements the citrus aromas, while the creamy avocado accentuates the mouthfeel of the wine.

The relatively small Etienne Sauzet domain is located in the village of Puligny-Montrachet. This world-famous producer of white burgundy actually needs little explanation. After all, owner and winemaker Gérard Boudot has given the domain world fame. From the day Etienne Sauzet died during the harvest in 1975, Boudot has been Sauzet's responsible winemaker.

For several years Gérard Boudot has been assisted by his daughter Emilie and son-in-law Benoit Riffault. Benoit has been responsible for winemaking in recent years, with Gérard in a coaching role in the background.

Sauzet wines are the pinnacle of purity, elegance, finesse and terroir expression. After first experimenting on a few plots, plots have been biodynamically processed since 2009. In recent years, all vineyards have been cultivated on the basis of biodynamic agricultural principles. Gérard Boudot gets the concentration of his wines from the harvest that was picked as late and healthy as possible. He obtains the finesse and the so characteristic elegance through a slow vinification. This harmony can be found both in his ordinary Chardonnay and in his Premiers Crus and Grand Crus, each with the very typical terroir nuances. The style of the wines is very precise, flawless and expressive, whereby the different terroirs are clearly visible. Currently they are again among the absolute top for white Burgundies.
