The Domaine des Caillots Touraine Sauvignon Terres de Silex is, as the name suggests, a 100% Sauvignon Blanc coming from the famous Slex soils (the sandy soil with flint-like clay). After manual picking, fermentation takes place in stainless steel vats at 17 - 19 ° C. They choose not to do this too cold in order to preserve the typicity of the terroir. After fermentation, the wine matures on its lees (sur lie) for 4 - 6 months in stainless steel tanks.

In the glass this beautiful Touraine wine has a straw yellow color with green accents. In the nose we smell aromas of spring flowers, hawthorn and acacia and of course a bit of citrus and freshly mown grass. In the mouth wine is fresh, lively with a fruity mouth with flavors of citrus fruits, lemon and grapefruit. With some time the vegetal tones disappear and make way for ripe fruit wild peach and apricot, associated with mineral flavor typical of these Silex soils

    The soft filling and hint of citrus provide a refined match with the tight, mineral style of this Touraine Sauvignon.

At Domaine des Caillots, they have been winemakers from father to son for many generations. They are proud winemakers who stick to traditions but who have also adopted modern techniques and thus have been making excellent wines for many years and at a very affordable price. No mass and in everything quality is more important than quantity. Their family estate consists of 21 hectares of vineyards located on the hills overlooking the River Cher in the Touraine AOC area.

The vineyards are located in famous areas on sandy soils with a varying amount of flint (silex) and limestone soils that give the wine a characteristic taste, classic for the Sauvignon Blanxc from that area. They have been working at Domaine des Caillots for many years using sustainable farming methods with minimal intervention.
