Description
The domain has been owned by the Michelot family for 6 generations. The domain now covers more than 19 hectares, including a number of prestigious 1er cru wines. Michelot consciously chooses to limit anti-disease treatments of the vines. They prefer a carefully planned program of plowing to keep the soil healthy. The harvest in the vineyards is done by manual selection of the best grapes. To maintain their independence as growers and winemakers, they are also not part of an organized system of organic viticulture. Today, Nicolas Mestre is the winemaker. With his cool hair he looks like a hip Kiwi winemaker. This is no coincidence: he learned the tricks of the trade in Marlborough, among other places. Today Nicolas produces finer and more mineral wines, with more remontage, less pigage and batonnage and less new oak (15% on average). According to them, the wines should evolve with contemporary eating habits with less buttery and fatty dishes.
The plot is located at the bottom of the hill on clay soil and a gravel subsoil, at an altitude of approximately 220 meters. The main feature of this plot is that it was partly planted in the 1930s, covering an area of more than one hectare. This ensures a consistent character (typical Meursault: rich and full without excess) and above all a constant yield from year to year, regardless of weather conditions. The rich and deep soil provides the vines with good conditions to thrive.
The grape bunches are lightly bruised, followed by a cold skin soaking of 6-12 hours. Alcoholic fermentation in wooden barrels, followed by 100% malolactic fermentation. Maturation in wooden barriques (15% new wood) for 10-12 months. After this, another 5-6 months of maturation "on the lie" for a guaranteed perfect balance. On the nose we smell notes of citrus, hay and blossom in the Domaine Michelot Meursault 'Sous La Velle'. A pleasant attack, round, full, creamy and a little bit of oiliness. The fine acidity keeps the wine fresh and accentuates the minerality.
