Bodegas Shaya was founded by Juan Gil. The Shaya Verdejo is a white wine from the DO Rueda made from 100% Verdejo from old vines with very minimal yields, planted in the southeastern part of the province of Segovia - in the south of the Rueda appellation. The poor sandy soils force the roots of the old vines to go meters deep in search of water. This further thickens the minerality. The wine is made by the Australian winemaker Belinda Thomson, from the Crawford River winery.

The grapes for this wine come from very old, low-yielding Verdejo vineyards. The vines are planted according to the vaso system in very sandy soils, which allows many of the vines to be ungrafted and very old. Fermentation took place in stainless steel tanks at a controlled temperature and the wine was then matured on the fine lees, which provides complexity, roundness and a creamy structure in the mouth. Part of the wine was fermented and then further matured in French oak barrels, which contributes to excellent bottle aging.

The Shaya Verdejo Old Vines (also known as Shaya Blanco) is light yellow in the glass with beautiful youthful green reflections. Due to the partial aging in contact with its own lees and with the wood, the wine has a lot of fruit concentration and complexity (which is unusual for a wine in this price range). The wine has beautiful aromas in which nuts, white fruit and exotic fruit such as pineapple, and green apples. In the mouth the wine is medium-bodied and the Shaya offers a fresh, elegant and inviting wine with an excellent acidity with clearly defined flavors. The wine is certified organic.

  • Grilled green asparagus with lemon and almond flakes
The freshness and green notes in the wine perfectly match the vegetal taste of asparagus, while the citrus aroma of the wine freshens up the dish. The almond flakes give a soft creaminess and structure that is nicely balanced with the tight acids of the Verdejo.

  • Whitefish ceviche with lime and coriander
The lively acidity of the Verdejo enhances the freshness of the ceviche and ensures that the acidity of the dish does not dominate. The aromatic intensity of the wine complements the coriander and lime well.

  • Fennel, apple and goat cheese salad
The aniseed freshness of fennel and the salty-creamy character of the goat cheese are beautifully supported by the crisp structure of the wine. The fresh apple brings out the fruity character in the Verdejo.

  • Thai shrimp curry with coconut milk and lime leaf
The wine holds its own with the mild spiciness and rich texture of the curry. The fresh acidity cuts through the creamy character of the coconut milk and provides balance, while the aromas of the lime leaf are enhanced.

  • Baked scallops with a yuzu and dill beurre blanc
The refined acidity and subtle tropical notes in the Verdejo enhance the delicate flavour of the scallops. The yuzu and dill bring tension to the dish that aligns beautifully with the aromatic profile of the wine.

  • Carpaccio of yellow beetroot with orange, hazelnut and soft ricotta
The earthy notes of the beetroot contrast beautifully with the citrusy freshness of the wine, while the ricotta provides a creamy base. The toasted hazelnut adds a nutty complexity that unexpectedly complements the spicy character of the Verdejo.
