Description
Bodegas Shaya was founded by Juan Gil. The Shaya Verdejo is a white wine from the DO Rueda made from 100% Verdejo from old vines with very minimal yields, planted in the southeastern part of the province of Segovia - in the south of the Rueda appellation. The poor sandy soils force the roots of the old vines to go meters deep in search of water. This further thickens the minerality. The wine is made by the Australian winemaker Belinda Thomson, from the Crawford River winery.
The grapes for this wine come from very old, low-yielding Verdejo vineyards. The vines are planted according to the vaso system in very sandy soils, which allows many of the vines to be ungrafted and very old. Fermentation took place in stainless steel tanks at a controlled temperature and the wine was then matured on the fine lees, which provides complexity, roundness and a creamy structure in the mouth. Part of the wine was fermented and then further matured in French oak barrels, which contributes to excellent bottle aging.
The Shaya Verdejo Old Vines (also known as Shaya Blanco) is light yellow in the glass with beautiful youthful green reflections. Due to the partial aging in contact with its own lees and with the wood, the wine has a lot of fruit concentration and complexity (which is unusual for a wine in this price range). The wine has beautiful aromas in which nuts, white fruit and exotic fruit such as pineapple, and green apples. In the mouth the wine is medium-bodied and the Shaya offers a fresh, elegant and inviting wine with an excellent acidity with clearly defined flavors. The wine is certified organic.
