Château Pavie is one of Saint-Émilion's leading estates, renowned for its chalky terroirs on the south-facing slopes of the plateau. The estate combines a distinct vision of ripeness and precision with a clear focus on terroir expression. Arômes de Pavie, the château's second wine, is made with the same care and attention, but in a more accessible style that emphasizes the freshness of the fruit.
More information about this winery can be found under the Winery tab.
Region, climate and location
Saint-Émilion is characterized by a mosaic of soils, with limestone, clay, and marl as dominant elements. The plots for Arômes de Pavie are situated on chalky soils that impart freshness, tension, and aromatic precision. The 2023 vintage produced grapes with ripeness and concentration, yet retained acidity, resulting in a lively and juicy profile.
Vineyards
The grapes for Arômes de Pavie come from carefully selected plots within the estate. These vineyards yield fruit with direct expression and a distinct minerality. The combination of location and soil structure contributes to the fresh and energetic style of this wine.
Grape varieties and composition
The 2023 blend consists of 50% Merlot and 50% Cabernet Franc, also known locally as Bouchet. Merlot provides ripe dark fruit and texture, while Cabernet Franc adds freshness, spice, and aromatic lift. This equal balance gives the wine both power and tension.
Harvest, vinification and maturation
After careful harvesting, the grapes are vinified with a focus on controlled extraction and preserving fruit purity. Maturation is focused on enhancing structure and mouthfeel without overshadowing the fruit's character. This approach results in a wine that is powerful yet remains fresh and accessible.
Color, smell and taste
The wine displays a deep ruby red color. The aromas of ripe blackcurrants and dark cherries dominate the nose, complemented by hints of cocoa, shelly minerality, and a chalky note. On the palate, the wine is full-bodied and distinctly flavorful, with juicy dark fruit and clear concentration. The tannins are present and slightly chewy, yet well-integrated. Despite its power, the wine remains fresh and energetic, with lively acidity and a dense, lingering finish that beautifully blends fruit and minerality.
Development and drinking window
Several drinking windows are mentioned for this vintage. Antonio Galloni of Vinous (90–92 points) suggests a drinking window of approximately 2026 to 2037 and emphasizes its early accessibility. Zekun Shuai of James Suckling awarded the wine 94 points and recommends drinking from around 2028. The wine combines immediate charm with sufficient structure to age for several years.
Summary of professional reviews
James Suckling's Zekun Shuai rated Arômes de Pavie 2023 94 points, praising its ripe, rich fruit, fresh juiciness, and dense finish. Antonio Galloni of Vinous awarded it 90-92 points, describing the wine as juicy and energetic, with vibrant reddish-purple fruit notes, floral accents, and crisp acidity that make it immediately drinkable.

Rich, ripe blackberries, dark cherries, mussel shells, cocoa powder and a chalky edge. Full-bodied and very flavorful, with nicely chewy tannins, lush berry fruit and a dense finish. Big but still fresh and juicy. A blend of 50% merlot and 50% bouchet (cabernet franc). Best after 2028.

Château Pavie ranks among the very best in Saint-Émilion. The estate is known for its powerful and structured wines, crafted from an extensive vineyard with diverse terroirs. Since Gérard Perse took ownership, Pavie has grown into a modern, ambitious estate with a strong focus on quality and precision.
About Château Pavie
Château Pavie is one of the most iconic wine estates in Saint-Émilion, located on the Right Bank of Bordeaux. The vineyard covers an impressive 42 hectares, making it one of the largest contiguous estates in the appellation. Despite its size, there is no uniformity. The soil is a mix of limestone, clay, and sand, spread across various slopes and elevations. Each parcel has its own microclimate, contributing to the depth, complexity, and layered character of the wines.
Château Pavie is known for being one of the last estates to harvest in Saint-Émilion. This gives the grapes the maximum time to ripen and reach their full potential. Today, 70% of the vineyard is organically farmed, with the goal of eventually converting the entire estate. This fits with the estate's meticulous and future-focused philosophy.
Gérard Perse: the success behind Château Pavie
Gérard Perse is the man behind Château Pavie’s success—a man with a remarkable story. Originally the son of a painter in Paris, he built his fortune with supermarket chains before turning his full attention to wine in the 1990s. In 1998, after acquiring other estates in the region, he purchased Château Pavie.
Perse did not shy away from innovation. He was initially criticized for his unconventional methods—such as green harvesting, removing unripe grape clusters to improve quality—which traditional Saint-Émilion producers viewed as wasteful. But his methods paid off. Today, many winemakers follow his lead, and Château Pavie is firmly established among Bordeaux’s elite.
One name, many faces: Pavie, Macquin, and Decesse
Did you know that the name “Pavie” refers to peach trees (*pavies*) that once grew on the hills of Saint-Émilion? The name appears in several estates, such as Château Pavie Macquin and Château Pavie Decesse. Although these are separate properties, they share a historical connection.
Unique facts about Château Pavie
- Innovative cellar design: Gérard Perse constructed a cutting-edge winery that uses gravity instead of pumps, keeping grapes and must in optimal condition.
Monolithic label: The Château Pavie label features an idealized Roman-style image of the estate—a deliberate choice by Perse to present it as a symbol of greatness. - Top classification since 2012: In the 2012 Saint-Émilion classification, Château Pavie was promoted to Premier Grand Cru Classé A, alongside Angélus. A recognition of decades of quality and vision.
- Micromapping in the vineyard: Each plot is individually analyzed for ripeness, sugar, and acidity levels, resulting in a blend crafted with ultimate precision.
Global acclaim:
The wines of Château Pavie are known for their power, concentration, and impressive structure. They offer outstanding aging potential and evolve beautifully over time. Critics agree: Château Pavie ranks among the world’s finest wines. Not only Robert Parker, but also many other international reviewers consistently award scores of 95 points and higher.
