The Gevrey-Chambertin 1er Cru Poissenot comes from the coldest (cool) located premier cru in the municipality of Gevrey-Chambertin with about 80% active calcium and only 20 centimeters of soil. This gives the wine fantastic acidity and a serious mineral character. In the nose a pallet of scents of red berries, potpourri and herbs. In the mouth it is medium to full bodied, elegant and supple with melting tannins, spicy acidity and an intense salty mineral aftertaste.

The brothers Emmanuel (Manou) and Frédéric Humbert are the fourth generation of wine producers of the Humbert family estate. On the domain, the emphasis is on manual working methods, including ploughing, green harvesting, if necessary, thinning of leaves and bunches. The grapes undergo a cool maceration of several days before fermentation in temperature-controlled vats. Over-extraction and too firm tannins are always avoided. All wines mature in Burgundy oak barrels from the forests around Châtillon. 50% new oak for all wines, except for the grand cru Charmes-Chambertin, which is aged on 100% new oak.
