Paul Cluver Seven Flags Pinot Noir 2021 is a refined red wine from Elgin, South Africa. The cooler location near the ocean produces Pinot Noir with bright red fruit, tension, and precision. This vintage displays ripe cherry and cranberry, floral notes, and a subtle earthy undertone. The structure is elegant with fine tannins and lively acidity.

Origin and climate of Elgin

Elgin lies east of Cape Town on a high plateau with cool nights and mild days. The proximity of the Atlantic Ocean brings morning mist and fresh winds, slowing ripening and preserving aroma and acidity. The soils consist of weathered sandstone, loam, and clay with good drainage. These conditions produce Pinot Noir with pure red fruit, floral nuances, and energetic balance.

The vineyards for Seven Flags are located in carefully selected plots with varying exposures and soil profiles. Low yields and selective picking produce concentrated grapes without losing freshness. The result is a wine that combines elegance and depth.

Vinification and taste profile of the 2021

The grapes are harvested by hand and rigorously selected. Fermentation takes place at a controlled temperature to preserve the delicate fruit. Some clusters remain intact for added aroma and texture. Maturation takes place in French oak barrels with a modest proportion of new wood to maintain the finesse.

The aroma reveals notes of red cherry, raspberry, cranberry, and rose , complemented by subtle spices and a hint of forest floor. On the palate, the wine is sleek yet layered. The mid-palate reveals juicy red fruit, delicate spice, and a mineral note. The tannins are silky and supported by fresh acidity, providing length and clarity. The finish is long, precise, and clean.

The 2021 style focuses on purity and detail. It's a Pinot Noir with focus, elegance, and drinkability that appeals to both lovers of classic Burgundian finesse and modern South African precision.

Wine and food pairings and serving tips

Serve this wine with dishes featuring refined flavors. Think duck with orange, veal steak, roasted chicken with thyme, or mushroom risotto. It also pairs wonderfully with grilled tuna, grilled salmon, charcuterie, and semi-hard cheeses like Comté and young Pecorino. Serve at approximately 15 to 16 degrees Celsius and allow the wine to air out for maximum expression.

Paul Cluver is located in Elgin, one of the coolest regions of South Africa. Paul Clüver is originally an apple company, but since 1986, on the initiative of owner Paul Clüver, also a wine company. Due to its location in a very cool area, directly by the sea, wines are made here with a remarkable finesse and freshness. Third generation starts with wine. The estate of the Clüver family, De Rust, was acquired in 1896 by the grandfather of the current owner, Paul Clüver.

Soil samples were taken during the 1980s, which showed that viticulture was perfectly possible here. It was then decided to replace part of the apple orchards with vineyards. It was initially agreed to process the grapes into wine on the Nederburg Estate, one of the
most famous houses of the Cape. The first grapes were planted in 1986: Sauvigon Blanc, Chardonnay, Gewürztraminer and Weisser Riesling. The latter grape has been planted to make sweet wines with the help of noble rot. The estate's wines are now entirely made in-house to give them their own character. Andries Burger, the winemaker of Paul Clüver, is responsible. Dr. Paul Clüver himself is still involved in his own profession: neurosurgery.
