Founded in 2010, Domaine François Carillon is the long-standing legacy of a family wine estate dating back to the 16th century in Puligny-Montrachet, a very typical wine village in the south of the Côte de Beaune - the most famous terroir of Burgundy for white wines. Situated in the heart of the village, the estate today owns and manages a vineyard of sixteen hectares in Puligny-Montrachet, Chassagne-Montrachet and Saint-Aubin. The estate produces around seventeen (depending on the harvests) different appellations, mainly in Chardonnay. Given the small production, the white wines of François Carillon are mainly found in the best restaurants in the world.
The Carillon family has been growing grapes in Puligny-Montrachet for almost 500 years. Ancient written sources found in Puligny tell of the life and work of Jean Carillon as early as 1520. His family continued to work the land and vineyard until the phylloxera crisis, which occurred at the end of the nineteenth century. Prosper and Jeanne Carillon were then forced to leave the region and work near Paris to provide for their needs, but soon returned out of love for the land and the vines. After the First World War, the entire estate was replanted. In the 1960s, polyculture and cattle breeding were abandoned in favor of the almost exclusive cultivation of Chardonnay by Louis Carillon. François began tending the family vineyards in 1988, working with his father Louis and brother Jacques until 2010, when the estate was divided between the two brothers.
Since 2010 and the creation of his own wine estate, François Carillon has become a renowned reference in Puligny-Montrachet for the refinement of his wines. Supported by a dynamic and close-knit team of ten people, François uses his energy and enthusiasm to constantly increase the quality and elegance of his products, thus pursuing the development of the family business with the same enthusiasm as in his early days. He ensures the future of the vineyard by passing on his know-how and love for his work to his four children.
The Chassagne-Montrachet 1er Cru Les Macherelles offers notes of pear, nutmeg and stone fruit, followed by a medium to full, rich but lively palate. Texturally rich, concentrated and structured with a fine minerality and focus and beautifully integrated oak. The finish fans out with great power.

The 2017 Chassagne-Montrachet 1er Cru Les Macherelles is the last vintage that Jacques Carillon produced from this site—planted to Pinot Noir until 2003—which has now reverted to his brother François. Revealing aromas of citrus oil, crisp green apple, white flowers and mandarin, it's medium to full-bodied, elegantly textural and incisive, with a precise, mineral finish.
Jacques Carillon began his harvest on August 25th, and he has produced a very charming range of wines. The 2018 vintage at this address is somewhat reminiscent of the Carillon 2015s—with a touch less density and concentration—and it is likely to drink well out of the gates. The domaine's 2017s, tasted from bottle, were showing very well, demonstrating more depth and structural tension, and even though 2017 also displays plenty of upfront appeal, it will be the longer-haul proposition of the two.
As I wrote last year, the Carillons have deep roots in Puligny-Montrachet, dating back to at least 1520, and intermarried with the Virot family—the late François Virot being the régisseur of Domaine Leflaive in its glory days. Brothers Jacques and François worked together with their father, Louis, but parted ways after the 2009 vintage, ending the Louis Carillon label and inaugurating domaines of their own. François's style is richer and more gourmand, whereas Jacques's is more tensile and understated. Winemaking chez Jacques is simple: the grapes are harvested by hand, pneumatically pressed, fermented and matured in barrel for a year, before being racked to tank for a further six months' élevage. Neither smoke nor mirrors, just classic white Burgundy.

The 2017 Chassagne-Montrachet Les Macherelles 1er Cru is the final vintage, since Jacques Carillon’s lease from his father finished and his brother François Carillon took over the entire holding. This has a lilting nose of red apple and hints of lime, displaying fine mineralité and focus and wonderfully integrated oak. The palate is very well balanced with sour lemon and hints of toffee apple on the entry and good weight in the mouth. The finish fans out with great vigor. Superb!

Everything starts in the vineyard. To obtain the best possible grapes, François is strongly committed to a precise and environmentally friendly approach to viticulture. The vines are therefore managed as naturally as possible. Since 1992, all our plots with vines have been weeded by tractor or horse plowing, and no weed killer is used. Respect for the environment and living organisms is something François deeply believes in.
Only products of natural origin are used, and only when necessary. In addition, instead of burning vines, as is often the case in Burgundy, they process them into small shreds, compost them and distribute them in the vines. In combination with horse manure, they enrich the soil without using fertilizers. The vineyard density is about 10000 vines per hectare, which allows them to extract plant food and water from the Puligny terroir (a lot of competition is deeper rooting). The pruning of the vine is done manually ('Guyot' pruning) and the grapes are harvested manually.
