Description
Château Haut-Bailly has a distinct style that combines classic with modern and elegance, finesse and softness with structure. The smoothness of the tannins provides elegant and complex aromas. Château Haut-Bailly can be kept for many years, but it is also a wonderful wine to drink now. This Château Haut-Bailly receives much praise from wine experts who agree that this Château Haut-Bailly offers complex pleasure and has a richness that is not aggressive but also not flashy. All these beautiful attributes that this wine has at its disposal mainly come from the selection process of the grapes and the landscape and the climate in which the grapes grow.
Experts in soil research have found that Haut Bailly has one of the finest terroirs in Pessac-Léognan. Great wines are created by the interplay between soil, location, climate and man.
The 2018 Haut-Bailly is a blend of 55% Cabernet Sauvignon, 35% Merlot, 5% Petit Verdot and 5% Cabernet Franc. The grapes were harvested from September 17 to October 9 and the wine has 14.4% alcohol. Deep purple-black in colour, it opens slowly with deep notes of Black Forest cake, crème de cassis, toasted nuts and black olives, unfolding to reveal notes of menthol, crushed rocks, melted licorice and grilled meat plus a hint of lilac. Full-bodied, rich and densely laden with layer upon layer of vibrant black fruits and mineral nuances, it has a solid backbone of firm, velvety tannins and seamless freshness, finishing very long with compelling restraint and exciting energy.

The 2018 Haut-Bailly is blended of 55% Cabernet Sauvignon, 35% Merlot, 5% Petit Verdot and 5% Cabernet Franc. Grapes were harvested September 17 to October 9, and the wine has 14.4% alcohol. Deep purple-black in color, it opens slowly with profound notions of Black Forest cake, crème de cassis, roasted nuts and black olives, unfurling to reveal notions of menthol, crushed rocks, molten licorice and chargrilled meat plus a hint of lilacs. Full-bodied, rich and densely laden with layer upon layer of vibrant black fruits and mineral nuances, it has a solid backbone of firm, velvety tannins and seamless freshness, finishing very long with compelling restraint and exciting energy.
Château Haut-Bailly is among the ranks of great estates with lamentably small yields in 2018. “We averaged around 21 hectoliters per hectare,” Véronique Sanders informed me. “It was a heavy price to pay for our no-toxic-chemicals philosophy, but we stuck to it.” Apart from mildew struggles, Haut-Bailly’s vineyard also suffered from coulure (poor flowering/fruit set) of the Merlot. And, thirdly, they lost 10% to 15% of potential volume due to the dry spell and ensuing concentration of very small berries it yielded. Their sister estate, Le Pape, furthermore got whacked with hail on May 26, making the crop there about half of average.
Now for the good news: quality is sky high! “The Cabernet Sauvignon crops were of a very high standard,” Véronique smiled at last. “We struggled to find some to put into the second wine. The Merlot looked like the Cabernet—very small berries this year.” Also noteworthy is the quantity and quality of the tannins this year. “These are the biggest tannins we have ever had—even bigger than 2010!” Véronique exclaimed. Meanwhile, acids are lower than 2010 or 2016, but not to the detriment of balance in my view.
One other piece of noteworthy news from this estate: the second label has had a name change. It will no longer be called "La Parde de Haut-Bailly"—from 2018 it will be known as "Haut-Bailly II."

Complex and expressive nose, offering red and dark fruit, spices and pepper with wood and mushroom undertones. Fresh mussel shell and a hint of ink, too. Full-bodied with a fine texture and great balance between the acidity and the controlled, tannic structure. Very long finish. Goes on and on. Tiny production, 21 hectoliters per hectare. Try after 2025.

From: Bordeaux 2018: Not Back in Black (Mar 2021)
The 2018 Haut-Bailly soars out of the glass, showing magnificent poise that only grows with time. Sweet, perfumed aromatics, silky tannins and mid-weight structure add to its considerable allure. Ripe red berry fruit, spice, blood orange, licorice, cedar, tobacco and menthol are all woven together in an effortless, classy Haut-Bailly that delivers the goods. I suppose the 2018 doesn't quite have the explosive energy of the very best years, but it more than makes up for that with its sensual, seductive personality.

Soil research experts have found that Château Haut-Bailly has one of the finest terroirs in the Pessac-Léognan. Great wines are created by the interplay between soil, location, climate and people. The wines have always been good, but have increased even more in quality in recent years. Haut-Bailly is known for its softness and silky texture. The wine has incredible potential for refined tannins and softly sweet, complex fruit nuances.
The vineyard is managed according to strict traditions and chemical herbicides are never used. Spraying is carefully limited, the soil is plowed and weeded with hoes, and the grapes are picked entirely by hand. The vinification takes place in a fermentation chamber with 26 thermo-regulated cement tanks of different sizes (ranging from 30 to 120 hectoliters). These specially adapted barrels ensure that the grapes, grown in different parts of the vineyard, are kept completely separate from the moment they are picked until the vinification.
The winemaking process takes place in cement tanks, while blending is done in stainless steel tanks - a great example of how tradition and modernity go hand in hand at Château Haut-Bailly. Alcoholic fermentation lasts eight to ten days and is followed by maceration. This process takes about three weeks during which the wine never overheats. In this way, a perfectly balanced wine is achieved.
