Medium-bodied with very integrated tannins that melt into the wine, with super length and finesse at the end. It’s the subtle texture and pure and complex fruit character that impress. 65% cabernet sauvignon, 22% merlot, 10% petit verdot and 3% cabernet franc. Drinkable now, but this will age beautifully.

The 2021 Haut-Bailly is incredibly poised, even if it is clearly a wine of reserve in this vintage. Its vertical build speaks of pure sophistication. Time in the glass brings out hints of dried herbs, menthol, licorice, pine, blackberry and underbrush. Most of the blend is Cabernet, so the flavor profile and overall structural feel is quite savory. I can't wait to see how the 2021 ages. It may very well surprise down the road.

The 2021 Haut-Bailly is a dark, rather somber wine. The aromatics alone are captivating, but there are strong savory inflections from the high percentage of Petit Verdot in this year's blend. This deceptively mid-weight Haut-Bailly has plenty to offer. Spice, leather, tobacco and incense linger. The final blend also includes 10% press wine.

Haut-Bailly endured a very tough year in 2021. Yields were 19 hectoliters per hectare as compared to the 40-45 we have in a good vintage," Estate Manager Véronique Sanders explained when I stopped by. "Frost took out 30% of the crop, hail and then mildew reduced yields by another 20%," she added. "We have 56 tanks in our new cellar but only used 13," added Technical Director Gabriel Vialard. The 2021s are intriguing, but also introspective wines that will need time to be at their most expressive.

Soil research experts have found that Château Haut-Bailly has one of the finest terroirs in the Pessac-Léognan. Great wines are created by the interplay between soil, location, climate and people. The wines have always been good, but have increased even more in quality in recent years. Haut-Bailly is known for its softness and silky texture. The wine has incredible potential for refined tannins and softly sweet, complex fruit nuances.
The vineyard is managed according to strict traditions and chemical herbicides are never used. Spraying is carefully limited, the soil is plowed and weeded with hoes, and the grapes are picked entirely by hand. The vinification takes place in a fermentation chamber with 26 thermo-regulated cement tanks of different sizes (ranging from 30 to 120 hectoliters). These specially adapted barrels ensure that the grapes, grown in different parts of the vineyard, are kept completely separate from the moment they are picked until the vinification.
The winemaking process takes place in cement tanks, while blending is done in stainless steel tanks - a great example of how tradition and modernity go hand in hand at Château Haut-Bailly. Alcoholic fermentation lasts eight to ten days and is followed by maceration. This process takes about three weeks during which the wine never overheats. In this way, a perfectly balanced wine is achieved.
