The vines are planted in a clay and calcareous soil and can be found around 100 meters above the Dordogne riverbed. "At high altitudes" this helps the vines avoid the damaging effects of the fog that often intrudes on the banks of the river. It also allows natural ventilation of the vines and therefore no chemical intervention and no need for anti-botrytis treatment. At Chateau Le Sèpe, everything is done to make the wine mainly in the vineyard, so it also carries out a manual aggressive pruning (read thinning) and this is mainly done at the top and on the side of the vineyard facing the rising sun. state. This enhances the positive effects of ventilation. No further chemical products are used. The harvest takes place at night to keep the coolness of the fruit destined for the barrel and we could go on like this for a while but it makes it clear that one consciously chooses to grow the fruit naturally and then only slightly less yield and this in contrast to the many mass-driven producers. The Chateau has also completely switched to biodynamic viticulture and will be certified very soon.
The red Le Sèpe is a blend of Merlot, Cabernet Sauvignon and 15% Malbec. The bunches of grapes are nosed before going into the barrel. The fermentation is controlled by "thermoregulation" with the daily turning of the must to facilitate the extraction of the tannins. The next stage - the maturation - takes place in French oak barrels for 12 months (Taransaud, Cadus, Darnajou and Bel-Air barrels with a capacity of 225 or 400 liters)
The wine has a beautiful red color and the nose is full of aromas of red fruit, blackcurrant and notes of vanilla. The wine is medium-bodied with good acidity and benefits from supple tannins and a generous finish with good balance. A very pleasant fruit-driven glass of wine and an excellent accompaniment to meat dishes (entrecote, grilled duck breast, game), cheeses (Langres, Tome d'Auvergne, old Gouda) and desserts with red fruit.
The residence, said to belong to the Knights Templar, was reorganized in the 17th and 18th centuries and now bears the name of the former residents. In early 2009, Catherine and Dominique Guffond acquired the Chateau Le Sèpe, a 23-hectare vineyard near Saint Emilion (Bordeaux). In previous years, they completed training in viticulture and oenology, and spent 1 year training at Chateau Ferrière, a Margaux classified vintage.
Chateau Le Sèpe's method is environmentally friendly to protect the beautiful terroir. Catherine and Dominique want to reduce the established use of phytosanitary products and continue to improve the already great quality of the domain's wines. The efforts of the entire team and expert support from JF Rontein, the vineyard oenologist, have earned Chateau Le Sèpe a gold medal for the very first vintage, the 2009, at the 2010 Wines Bordeaux competition. Chateau Le Sèpe has since achieved even more great successes: they won several medals, for each vintage, including gold medals for the Bordeaux, Lyon, Brussels and Beaune (Féminalise) competitions, Decanter.
Chateau Le Sèpe also has 2 beautiful, comfortable rooms where guests can enjoy a panoramic view of the vineyard and where they can also enjoy the pleasure of wine tasting. The wines can be tasted on the domain all year round.
Château Le Sèpe is AB (Agriculture Biologique) certified from 2020. AB is a private label for the organic market in France. Companies must adhere to both the conditions of the European Organic Label (EU-Organic) and those of AB and are subject to strict, professional audit and certification procedures.
Organic farming produces food with respect for the natural life cycle and with the least possible human impact on the environment. Genetically modified organisms (GMO) are not used in organic farming. In order to be allowed to sell an organic product, the entire chain must first be inspected and certified. The certificate is only issued if all requirements have been met, after which the relevant quality mark may be used on the product.
