Occasionally, manzanilla wines are subjected to extra long aging periods. During that period, the flor will decrease in thickness, allowing a slight form of oxidation to take place, which will increase the complexity of the wine. These wines are then called "Manzanilla Pasada".
The historic buildings of Calle Misericordia in Sanlúcar de Barrameda were extensively renovated several years ago. The works did not affect the thousands of barrels of the solera and criaderas of manzanilla matured in the two main buildings, but there were a few barrels of particular size and provenance, including two barrels of 90 arrobas (ie 1500 liters each) . These two barrels were filled with a selection of the best wines from small barrels of around 14 years old and allowed to age for an extra long time, thus following the style of the Equipo Navazos la Bota de Manzanilla Pasada La Bota series and this Nº 103 is the successor to the edition no. 70 released in 2016.
Only Magnums of this Equipo Navazos la Bota de Manzanilla Pasada La Bota Nº 103 were released and then only 900 pieces. It is a complex and powerful wine with a balanced freshness and elegant oxidation tones. Amazingly versatile on the dining table, it pairs with a wide variety of dishes, including rich seafood dishes, charcuterie, truffle dishes and great with real Iberico Belotta ham . Best served around 11º C
