The distinctive style of Billecart-Salmon champagne is thanks to Jean Roland-Billecart. In the late 1950s, he introduced a fermentation method in which – among other things – the temperature does not exceed 13°C. This slows down the fermentation process, allowing all the delicate aromas to fully develop. The long aging on the lees (sediment) that follows gives the wine a unique clarity and purity. The result is fresh champagnes with great finesse and fine bubbles. It is no coincidence that Billecart-Salmon ranks among the top ten most highly regarded champagnes and is a favorite of sommeliers in top gastronomic restaurants.

Billecart-Salmon Brut Rosé is a champagne from the Billecart-Salmon house in the French town of Mareuil-sur-Aÿ. It is an extra brut champagne, which means it contains little sugar. It has a pink color, obtained through a short maceration of the grapes. The taste is elegant and fruity with notes of strawberries, raspberries, and citrus. Billecart-Salmon Brut Rosé is a good choice for a festive occasion or as an aperitif. This is a 1.5-liter magnum. Even tastier and more festive.

The first time I had the opportunity to taste the Brut Rosé cuvée, and it was a long time ago now, was at the restaurant of Alain Passard. What I liked straight away was the vinous dimension of this cuvée. You can sense that behind the champagne there is a real wine there. Next it begins to unveil itself more intimately, with notes of citrus fruits and red berries which are more subtle and elegant. This cuvée showcases the mastery and knowledge of balance. It's this subtle delicateness, born from harmony and finesse which I like in the Brut Rosé. For me, this champagne is an ideal partner to accompany the desserts that I create. For me, this champagne can be drunk at any point, breakfast lunch or dinner ray of sunlight that transcends the beauty of the moment.

Billecart Salmon History

The story begins with Nicolas François Billecart and Elisabeth Salmon, who started a small venture that has since grown into one of the best kept jewels of Champagne. Remarkably, the estate is still fully run by descendants of the founding family. No investors, no acquisitions, no industrial scale. Just generations following in each other’s footsteps with the same calm determination that defines the wines.

Early on, the family chose a winemaking approach where precision mattered more than speed. At a time when Champagne production was largely volume driven, they were already working with cooler fermentations and extended maturation. It resulted in a style that has remained soft, lively and unmistakable.

Terroir of Billecart Salmon

Mareuil sur Aÿ is blessed with soils that act almost like a natural cellar master. Layers of chalk retain moisture, cool the roots and give that signature tension that enthusiasts recognize in a single sip. The family works with vineyards in Premier Cru and Grand Cru villages that have been tended by the same growers for generations. Some parcels are so consistently cultivated that it almost feels as if the grapes know exactly what is expected of them.
