PREMIERE - SPRING 2028 DELIVERY. Arômes de Pavie 2025 is the second wine of the iconic Château Pavie and offers an excellent introduction to the style of one of the greatest names of Saint-Émilion. Sourced from a specially selected plot on the limestone plateau of Saint-Émilion, this vintage combines concentration, finesse, and the characteristic minerality of the terroir.

Arômes de Pavie 2025 from the limestone plateau of Saint-Émilion

Arômes de Pavie is produced on a separate 13.5-hectare plot located on the famous limestone plateau of Saint-Émilion. The vineyard is situated approximately 85 meters above the Dordogne and consists of clay-limestone soils over limestone with fossil deposits. This subsoil is known for its ability to impart freshness, tension, and a pronounced terroir expression to the wine.

The wine is composed of an equal proportion of Merlot and Cabernet Franc, a combination that ensures both ripe fruit and aromatic refinement. With an average age of 32 years, the vines yield grapes with sufficient concentration and depth. The low yield of only 18 hl/ha underscores the selection made during the growing season.

Ripe fruit, floral notes and chalky freshness

The 2025 presents aromas of black cherries, ripe plums, and dark berries, supported by floral nuances typical of Cabernet Franc. Following these are notes of spices, liquorice, and subtle woody influences derived from oak aging.

On the palate, Arômes de Pavie displays a beautiful combination of ripeness and freshness. The fruit is full and concentrated, yet is supported by a lively structure and a chalky tension that provides balance. The tannins are refined and give the wine sufficient grip without overpowering the fruit.

Vinification with the same precision as Château Pavie

The grapes are harvested entirely by hand and rigorously selected. Fermentation takes place in temperature-controlled wooden vats, followed by malolactic fermentation in barriques. For aging, 50% new French oak barrels and 50% one-year-old barrels are used.

This approach results in a wine in which fruit, structure, and oak are beautifully integrated. Consequently, Arômes de Pavie 2025 offers much of the elegance, depth, and precision that connoisseurs associate with Château Pavie, but in a more accessible and approachable style.

Arômes de Pavie is much more than a classic second wine. Thanks to low yields, high-quality terroir, and careful selection, the wine possesses an identity of its own that is clearly related to the grand vin. The 2025 combines ripe dark fruit, refined tannins, and the characteristic chalky freshness of Saint-Émilion into a wine that offers both charm and serious depth.

About Château Pavie

Château Pavie is one of the most iconic wine estates in Saint-Émilion, located on the Right Bank of Bordeaux. The vineyard covers an impressive 42 hectares, making it one of the largest contiguous estates in the appellation. Despite its size, there is no uniformity. The soil is a mix of limestone, clay, and sand, spread across various slopes and elevations. Each parcel has its own microclimate, contributing to the depth, complexity, and layered character of the wines.

 

Château Pavie is known for being one of the last estates to harvest in Saint-Émilion. This gives the grapes the maximum time to ripen and reach their full potential. Gérard Perse: the success behind Château Pavie

Gérard Perse is the man behind Château Pavie’s success—a man with a remarkable story. Originally the son of a painter in Paris, he built his fortune with supermarket chains before turning his full attention to wine in the 1990s. In 1998, after acquiring other estates in the region, he purchased Château Pavie.

 

Perse did not shy away from innovation. He was initially criticized for his unconventional methods—such as green harvesting, removing unripe grape clusters to improve quality—which traditional Saint-Émilion producers viewed as wasteful. But his methods paid off. Today, many winemakers follow his lead, and Château Pavie is firmly established among Bordeaux’s elite.
