Winery

Pavillon Blanc du Château Margaux is one of the most prestigious white wines of Bordeaux. Although Château Margaux is primarily known worldwide for its legendary red Grand Vin, the estate also has a long tradition of white wine production. Pavillon Blanc is made exclusively from Sauvignon Blanc and comes from a separate vineyard within the Château Margaux estate. Thanks to the combination of low yields, meticulous selection, and an uncompromising approach, this wine has been one of the absolute benchmarks of Bordeaux Blanc for years. Origin and terroir

The grapes originate from a specific plot within the Château Margaux estate in the Médoc. The soil consists primarily of deep gravel deposits with a subsoil of clay and limestone. This combination ensures excellent drainage and encourages the roots to grow deep. Furthermore, the proximity of the Gironde has a moderating effect on the climate. As a result, the grapes can ripen slowly and retain their aromatic precision. The terroir yields white wines with tension, freshness, and a remarkable mineral signature.

Grapes and vineyard management

The 2025 Pavillon Blanc is made entirely from Sauvignon Blanc. The yield was only 16 hectoliters per hectare, an exceptionally low level that resulted in grapes with great concentration and aromatic intensity. The harvest took place between August 18 and 22, one of the earliest harvest times of recent years. Every grape was carefully selected to use only fruit of the highest quality for this prestigious cuvée.

Vinification and aging

After the harvest, the grapes are gently pressed to preserve maximum aromatic purity. Fermentation takes place in French oak barrels, approximately 20% of which are new. In 2025, a deliberate choice was made to use less bâtonnage than usual, as the natural richness of the fruit already offered sufficient texture and volume. During aging, sur lie maturation contributes to extra depth, creaminess, and complexity. The use of wood remains subtly present and supports the wine without overpowering the character of the Sauvignon Blanc.

Color, smell and taste

The wine has a bright light yellow color with golden reflections. On the nose, aromas of citrus zest, mandarin, lemon, white peach, ripe pear, and passion fruit emerge. Additionally, nuances of white pepper, fresh herbs, and subtle floral notes are present. On the palate, the wine displays a remarkable combination of concentration and freshness. The fruit is rich and full, yet is supported by lively acidity that provides tension and precision. The texture is silky and refined, while the finish lingers long, aromatic, and mineral.

Style and character

The 2025 Pavillon Blanc displays a slightly richer and more expressive style than many previous vintages. The wine retains its characteristic precision and elegance, while also showing a strikingly exotic side. The combination of ripe fruit, lively acidity, and a refined structure makes this a wine with a strong personality. Despite the richness, everything remains perfectly balanced, and the wine retains its characteristic refinement.

Volume

The 2025 vintage experienced relatively dry conditions for white Bordeaux. Thanks to low yields and careful selection, a wine emerged with great aromatic intensity and concentration. The pH is only 3.14, resulting in striking freshness and excellent aging potential. The drinking window runs from 2028 to 2040. The wine possesses sufficient structure and tension to continue developing for years to come. At the time of writing, the alcohol percentage has not yet been officially published by the château.

Food and wine pairings

This white Bordeaux pairs excellently with lobster, scallops, turbot, and other refined seafood dishes. Poultry with creamy sauces, veal, and dishes with citrus accents also complement the wine's aromatic profile beautifully. Thanks to the combination of richness and freshness, Pavillon Blanc can also be perfectly paired with Asian dishes featuring citrus, herbs, and light spices.

Château Margaux is one of those names in the wine world that instantly sparks the imagination. A stately château, centuries of history, and wines that rank among the very best of Bordeaux.

History of Château Margaux

The roots of Château Margaux go back to the Middle Ages, when the estate was still known as Lamothe. In the 16th century, the Lestonnac family began transforming the land into a vineyard with serious ambition. Over the centuries, ownership changed hands many times, but the reputation steadily grew. In the early 19th century, the Marquis de la Colonilla built the current château, a refined neo-Palladian building that still dominates the skyline of Margaux today.

In 1855, Château Margaux was classified as Premier Grand Cru Classé, the highest ranking in the famous Bordeaux classification. Yet the estate also faced harder times. In the 1970s its reputation began to fade, until Greek businessman André Mentzelopoulos revived it. Since then, Château Margaux has remained tied to his family and is now run by his daughter Corinne and her children.

Location and terroir of Château Margaux

The estate lies in the Médoc, on the left bank of the Gironde, within the Margaux AOC. This appellation is known for elegant and refined red wines. The soil at Château Margaux is distinctive: deep layers of gravel with touches of clay and limestone. The gravel provides excellent drainage, forcing the vines to root deeply. This results in grapes with great concentration and tension, the foundation of the estate’s renowned wines.

Grape varieties of Château Margaux

As is typical in the Médoc, Cabernet Sauvignon takes the lead. Around three-quarters of the vineyards are planted with it. Merlot makes up about twenty percent, with smaller plots of Petit Verdot and Cabernet Franc. This blend gives the wines both power and finesse. For whites there’s a rare exception: Pavillon Blanc, made entirely from Sauvignon Blanc, grown on a smaller plot next to the red vineyards.

Château Margaux wine styles

The most famous wine is of course the Grand Vin de Château Margaux. Then there is Pavillon Rouge, the second wine often made from younger vines or parcels that don’t make it into the first selection. More recently, a third label has been added: Margaux du Château Margaux. For white wine lovers there is Pavillon Blanc, praised for its freshness and long ageing potential.

Winemaking combines tradition and modern technique. The red wines age for about one and a half to two years in new French oak, giving them depth and complexity. The white wine is aged for a shorter time, preserving its lively character. A special detail: Château Margaux even has its own cooperage, giving them full control over the quality of their barrels.
