De Winkl is a typical Alto Adige Sauvignon Blanc – Fresh and Aromatic. Manual harvest and selection of the grapes; gentle pressing and clarification of the juice by natural sedimentation; slow fermentation at controlled temperature in stainless steel tanks, aging on the lees partly in stainless steel tanks (80%) and partly in large wooden barrels (20%) for 7-8 months.

This Kellerei Cantina Terlan Winkl has a beautiful, intense straw-yellow hue with a fine, delicate green sheen in the glass. On the nose, there are notes of ripe fruit such as apricot, mandarin, and passion fruit, with a subtle hint of elderberry, gooseberry, and mint. The taste and fruitiness continue on the palate, and combined with fine acidity and minerality, this makes for a beautiful, fresh, and rich wine that possesses all the characteristics of a great Sauvignon Blanc.

An interesting combination in spring with boiled white asparagus in Bolzano sauce as well as with steamed green asparagus; also with tuna carpaccio, smoked salmon, and raw langoustines; and a typical South Tyrolean choice with nettle dumplings, as well as poached trout with vegetables or young goat cheese. Detailed pairings Foam of white Terlan asparagus with quail eggs and bitter almond - Giancarlo Perbellini (Ristorante Perbellini),
