All Tony Bish wines are produced in vineyards certified under the New Zealand sustainability system. The vines are managed sustainably without the use of pesticides. The harvested fruit is carefully destemmed without crushing the grapes. After the juice has settled, it is transferred to large, 9hl French oak barrels for further aging.

The Chardonnay grapes for the Tony Bish Heartwood Chardonnay are harvested from vineyards in the Bridge Pa and Mangatahi districts of Hawke's Bay. Hand-harvesting ensures fresh fruit, which contributes to the quality and purity of the wine. No pesticides are used in these vineyards either. Hand-picked Hawke's Bay Chardonnay is pressed whole, using only the free-run juice, which is fermented in new, seasoned French oak barriques. No additives are made to the juice prior to fermentation. The wine ages in barrels for 11 months and is minimally disturbed before bottling.

The Tony Bish Heartwood Chardonnay has pure and intense aromas of peach, sweet citrus notes, nutty complexity, and sublime vanilla. Complex and seductive. These aromas flow into the mouth, which is heavy, rich, and pure with a defined varietal expression, complexity from barrel fermentation, and a persistent citrus finish. The French oak and fruit are beautifully balanced. Try it with sole fried in butter, but it also pairs very well with small game, chicken, and veal.

ABOUT TONY BISH

It was the early 1980s when Tony Bish began his journey with wine. He had little money at the time, but used the little he did have to go skiing on Mount Hutt. Here, the first vintage with Corbans in Gisborne was a pragmatic start to what has become a passionate forty-year career. Six years later, Tony graduated with a Bachelor of Applied Science in Oenology. At that stage, Tony's new knowledge and experience were already being called upon. In 1986, together with the Mason Sacred brothers, he founded Hill Wines in Hawkes's Bay. He and Karryn launched Tony Bish Wines in 2013, and they now sell four chardonnay styles directly to other chardonnay lovers across the country and around the world. Tony's creative spirit was unleashed in 2013, after a trip to South America, where he made wine that was produced in egg-shaped tanks. With some ingenuity and local know-how from Hastings-based NZ Tanks, Tony built the first concrete egg fermenters in New Zealand.
