Winery

Domaine Sylvain Morey is one of the most interesting addresses in Chassagne-Montrachet. Sylvain Morey grew up in a well-known wine family and worked at the family estate for many years before starting his own winery in 2014. Since then, he has quickly made a name for himself with wines that excel in finesse, precision, and a clear expression of terroir. His style is classic Burgundian, but with a striking clarity and tension that gives the wines great energy. Even in the Premier Crus, the influence of oak generally remains subordinate to the terroir. You can find more information about this winery in the Winery tab.

Origin and terroir

Les Caillerets is one of the most famous Premier Cru vineyards in Chassagne-Montrachet and is situated on a particularly favorable slope with a distinctly calcareous soil. The name itself alludes to the stony, calcareous subsoil that plays a major role in the character of the wine here. Wines from Caillerets are often known for their tension, finesse, and linear structure. While some other Premier Crus from Chassagne display more breadth and richness, Caillerets often shows the more refined, precise, and mineral side of the appellation.

Grapes and vineyard management

This Premier Cru is made from 100% Chardonnay. In the vineyard, the emphasis is on healthy grapes, balanced yields, and careful selection during the harvest. For a terroir like Caillerets, it is essential that the grapes reach sufficient ripeness without losing the tension so characteristic of this vineyard. The combination of ancient Burgundian knowledge and meticulous vineyard practices ensures that the wine retains both concentration and refinement.

Vinification and aging

After the harvest, the grapes are carefully pressed and vinified with great attention to detail. Fermentation takes place traditionally in a manner that preserves both the aromatic finesse and the texture of the Chardonnay. This is followed by aging on the fine lees, which gives the wine extra depth and tension. This sur lie aging imparts a subtle creaminess and greater complexity to the wine, while the freshness remains intact. At Sylvain Morey, the aging remains focused on keeping the character of Caillerets central and not allowing it to be lost behind excessive oak influence.

Color, smell and taste

In the glass, the wine displays a bright golden-yellow color. The aroma opens with citrus, lime, white peach, and ripe apple, followed by notes of white flowers, wet stone, light toast, and a hint of almond. On the palate, the combination of concentration and precision is immediately apparent. The wine has a refined texture but remains taut and energetic thanks to the chalky tension and lively acidity. As the wine opens up, notes of brioche, riper stone fruit, and subtle salinity also emerge. The finish is long, mineral, and elegant.

Style and character

This Chassagne-Montrachet 1er Cru Caillerets displays a more linear and refined style than many richer white Burgundies. The wine is built on tension, minerality, and precision, yet does not lack depth. This makes it particularly interesting for lovers of white Burgundy seeking subtlety, length, and terroir expression. Sylvain Morey's signature fits perfectly here: pure, controlled, and with great attention to detail.

Volume

The 2024 vintage seems to align well with the character of Caillerets. In a classic Burgundian year, a terroir like this can yield a great deal of finesse and tension, especially when the winemaker focuses on precision rather than extraction or excessive ripeness. Consequently, a wine can be expected with fresh acidity, distinct minerality, and a refined structure. The expected drinking window runs from 2028 to 2036.

Food and wine pairings

This Premier Cru pairs beautifully with turbot, sole, scallops, lobster, and other refined seafood dishes. Poultry with a light cream sauce, veal, and dishes with white truffle or mushrooms also match the wine's tension and texture perfectly. Moreover, thanks to its mineral precision, this is a wine that proves particularly versatile at the table.

Sylvain Morey is the son of Jean-Marc Morey from Chassagne-Montrachet, whose wines adorned our range for many years. After Jean-Marc's retirement In 2014, the vineyard plots were divided between Sylvan and his sister Caroline.

The driven Sylvain left Burgundy much earlier, determined to find his own way and had founded a wine estate in the Luberon, much further south. His experience on this own project, combined with the deep knowledge he gained from his father, has made Sylvain a thoughtful yet confident winemaker, one who respects the traditional way his father worked, but also brings out his own sensibility. He immediately planned to split his time between Chassagne and Luberon and keep the same cellar where his father has always worked. With his first releases in 2014, his mark on the wines is clear. The wines have a little more power than those of his father, are richer in structure but have retained the substantial mineral side. Sylvain's Burgundian heritage really shows his high standards of production. Harvests here can be quite late due to the cooler and relatively dry climate. All the fruit for Sylvain's wines is harvested by hand, with a strict selection made in the vineyards. Fermentations for both white and red are allowed to start spontaneously with native yeasts. He tries to make a soft extraction for the red wines with minimal remontages and no pigeage (stirring the must). Once fermentation is complete, the wines are aged in various sized barrels or concrete tanks before bottling with only minimal filtration when required.
