Winery
Domaine Sylvain Morey is one of the most interesting estates in Chassagne-Montrachet. Sylvain Morey comes from a renowned wine family and worked at the family estate for many years before founding his own winery in 2014. He is now regarded as one of the prominent names of the southern Côte de Beaune. His style is characterized by precision, tension, and a deep respect for the terroir. Although the estate is primarily known for its wines from Chassagne-Montrachet and Saint-Aubin, the Bourgogne Aligoté also clearly demonstrates the seriousness with which work is carried out at every level. You can find more information about this winery in the Winery tab.
Origin and terroir
This Bourgogne Aligoté comes from Burgundy, where calcareous soils and a temperate continental climate offer ideal conditions for fresh and refined white wines. Aligoté feels particularly at home on soils of limestone and clay, as this combination provides tension, structure, and a lively minerality. At a domain like Sylvain Morey's, the emphasis is not on simple thirst quenchers, but on a wine that takes the grape seriously and clearly shows where it comes from.
Grapes and vineyard management
The wine is made from 100% Aligoté, a grape that was long overshadowed by Chardonnay in Burgundy but has been gaining increasing appreciation in recent years. At Sylvain Morey, it is all about healthy grapes, meticulous selection, and vineyard management focused on balance rather than maximum yield. As a result, the Aligoté retains its fresh acidity and lively citrus character, while simultaneously gaining sufficient concentration to be gastronomically interesting as well.
Vinification and aging
The vinification is aimed at preserving the freshness and natural tension of Aligoté. The grapes are carefully pressed and ferment under controlled conditions. Aging is carried out with great attention to texture and purity, without the fruit being overpowered by wood. A portion of the wine typically ages on the fine lees, giving the wine extra roundness and depth. This sur lie aging gives Bourgogne Aligoté more structure than you might expect based on the appellation.
Color, smell and taste
In the glass, the wine displays a clear, light yellow color with fresh reflections. The nose opens with aromas of lemon, lime, green apple, and white blossom. Additionally, notes of wet stone, a hint of white pepper, and occasionally some riper stone fruit are present. On the palate, the wine is taut, lively, and precise. The acidity provides tension and energy, while the fine texture prevents the wine from becoming too sharp. The finish is fresh, mineral, and remarkably long for a Bourgogne Aligoté.
Style and character
This Bourgogne Aligoté clearly demonstrates why the grape is undergoing a distinct revaluation. This is not a simple side white wine, but a serious Burgundy with freshness, tension, and subtle depth. Sylvain Morey's style is refined and pure, with more emphasis on precision and terroir expression than on richness or oak influence. As a result, this is a wine that comes into its own both as an aperitif and at the table.
Volume
The 2024 vintage is expected to align well with the fresh and energetic character that suits Aligoté so well. In a cooler, more classic style, this grape can display a great deal of tension and finesse. For a producer like Sylvain Morey, this is precisely an opportunity to create a Bourgogne Aligoté with precision and clarity.
Food and wine pairings
This Bourgogne Aligoté is an excellent wine with oysters, shellfish, grilled fish, and light starters. It also pairs beautifully with salads with goat cheese, sushi, ceviche, or classic gougères. Furthermore, its fresh acidity and mineral character make it a very pleasant wine as an aperitif.

Sylvain Morey is the son of Jean-Marc Morey from Chassagne-Montrachet, whose wines adorned our range for many years. After Jean-Marc's retirement In 2014, the vineyard plots were divided between Sylvan and his sister Caroline.
The driven Sylvain left Burgundy much earlier, determined to find his own way and had founded a wine estate in the Luberon, much further south. His experience on this own project, combined with the deep knowledge he gained from his father, has made Sylvain a thoughtful yet confident winemaker, one who respects the traditional way his father worked, but also brings out his own sensibility. He immediately planned to split his time between Chassagne and Luberon and keep the same cellar where his father has always worked. With his first releases in 2014, his mark on the wines is clear. The wines have a little more power than those of his father, are richer in structure but have retained the substantial mineral side. Sylvain's Burgundian heritage really shows his high standards of production. Harvests here can be quite late due to the cooler and relatively dry climate. All the fruit for Sylvain's wines is harvested by hand, with a strict selection made in the vineyards. Fermentations for both white and red are allowed to start spontaneously with native yeasts. He tries to make a soft extraction for the red wines with minimal remontages and no pigeage (stirring the must). Once fermentation is complete, the wines are aged in various sized barrels or concrete tanks before bottling with only minimal filtration when required.
