The Casa Rojo El Gordo del Circo Verdejo is not just any Verdejo, but a very beautiful and especially elegant wine. This is due not only to the high quality of the fruit but also to the long cold-temperature aging on the lees (the lees), which gives the wine great roundness on the palate and a powerful structure. The Verdejo grapes come from a vineyard approximately 30 years old, situated on gravelly and poor sandy soils. This requires the vines to have very deep roots and work hard, and wine connoisseurs know that a vine must "suffer" to produce the finest fruit. The grapes come from Olmedo, Valdestillas, and Segovia, 100% Verdejo. The grapes are macerated at a low temperature for 24 hours. Fermentation takes place in amphorae (eggs) at a low temperature to extract a large amount of aromatic compounds from the grapes, and then the wine is aged on its lees for 5-6 months.

The Casa Rojo El Gordo del Circo Verdejo has a light straw yellow color with greenish hues, clean, bright, and transparent. The nose is elegant and intense, with initial balsamic notes of fennel, hay, mown grass, and anise, giving way to hints of citrus and white fruit. On the palate, it is broad and fresh, with intense acidity, maintaining a perfect balance with the sugar.
