Aubert et Mathieu is a modern winery founded in 2018 by childhood friends Anthony Aubert and Jean-Charles Mathieu. Based in the Languedoc-Roussillon region, they strive to produce wines that are both characterful and environmentally friendly. Their focus is on creating unique wines that reflect the diversity of the region, with a strong emphasis on sustainability and innovation.
The Languedoc-Roussillon region: climate and location of the vineyards
The Languedoc-Roussillon, located in the south of France, is known for its Mediterranean climate with warm, dry summers and mild winters. The vineyards of Aubert et Mathieu benefit from these conditions, as well as from the diverse soil composition, ranging from limestone to clay. This combination contributes to the complexity and freshness of their wines.
Suzy Chardonnay: grapes, harvest, fermentation and maturation
The Suzy Chardonnay is made from 100% organic Chardonnay grapes, originating from carefully selected plots in the Languedoc. The grapes are harvested at night to preserve freshness. Fermentation takes place in stainless steel tanks at controlled temperatures, resulting in a wine with a pure and fruity character. No use is made of wood aging, so that the natural expression of the grape is central.
