Description
This wine is made exclusively from the Bobal grape variety, selected from old, low-yielding vines that are over 80 years old, grown in the vineyards of Bodegas Hispano Suizas. "Bobos" is a synonym for the Bobal variety. This wine, made from Bobal, is unique. They have named this wine "Bobos" in homage to this variety. Finca Casa la Borracha is the estate where these special Bobal vines are located, on the estate of Bodegas Hispano Suizas. They select only the best grapes from low-yielding vines, with only 1600 plants per hectare from their own Bobal vineyards.
The grapes are hand-picked into special boxes of 15 kg each. They only harvest very early in the morning to keep the grapes at an optimal temperature until they reach the winery. Once arrived at the winery, the full boxes are stored in cold rooms at a temperature of -10°C for 3 days. Then the grapes are selected box by box, followed by destemming and placement in new 400-litre American oak barrels with the tops removed. A stainless steel panel with chilled water is placed in each barrel to macerate the grapes for 4 days at 8°C. Every day the skin cap is manually immersed, barrel by barrel. As soon as fermentation begins, the cool water is turned off. The temperature in the barrel can reach a maximum of 26°C during fermentation. After 15 days, the grapes are gently pressed in a pneumatic press at a pressure of maximum 0.5 bar.
The wine is aged for at least 10 months in new French Allier oak barrels and then bottled after a very light filtration.
In the glass, the Bobos is intensely red with violet hues and earthy tones. On the nose we smell complex aromas, a combination of ripe fruit and wood with a balsamic toasted background. On the palate the wine is full bodied with velvety, elegant tannins that are well integrated with the fruit and the oak. The Bobos Casa La Borracha also has a good acidity that makes you long for another sip and a long, harmonious aftertaste.
Recommended with: Roasted meats or cheeses. Serve between 16-18ºC. Any slight sediment is natural, as they filtered the wine as little as possible to maximize quality.

Hispano Suizas was founded in 2006 by three passionate winemakers with a shared vision to create a world-class winery. Pablo Ossorio, Rafael Navarro, and Marc Grin were united by their common passion for wine and their desire to introduce innovations in viticulture.
