Description
In 1973, René Lamy and Thérèse Pillot, both born into established winemaking families, married and established their estate in the Hameau de Morgeot on the edge of Chassagne-Montrachet. The Pillot family traces its origins back to the commune of Chassagne-Montrachet in 1595. The Lamy-Pillot winery is a family estate that cultivates 20 hectares of vineyards spread across 27 different appellations, primarily located in Chassagne-Montrachet and Saint-Aubin. Today, the estate is run by their daughters, Florence and Karine, and their wives. Florence and her husband, Sebastien Caillat, are currently responsible for winemaking. Florence trained in Beaune, while Sebastien Caillat was educated in Strasbourg and Dijon. In addition to their training, they both completed numerous internships, both domestically and internationally, before taking over the cellar in 1998.
The Saint-Aubin wine region in the Côte de Beaune should not be confused with the other 69 villages bearing the same name throughout France. "Saint Aubin" is the name of a 6th-century bishop known for his generosity to the sick, widows, and orphans, and who reportedly performed miracles both during his lifetime and after his death. Perhaps this is another reason why Burgundy wine is so coveted; it seems to taste of "wine miracles," both in its youth and long after it begins to age in the bottle.
The Saint-Aubin wine region is flanked by two very famous neighbors, Puligny-Montrachet and Chassagne-Montrachet. With 30 Premier Cru vineyards representing 75 percent of production, this region is known for excellent Pinot Noir and Chardonnay wines.
The wine style is characterized by a balanced and supportive use of oak. The beautiful terroir, with its mineral notes, is not overpowered by excessive oak, allowing the fruit to shine through beautifully in all the cuvées. This is a 1.5-liter magnum – even more delicious, more festive, and with a longer drinking window.

The 2022 Saint-Aubin Les Pucelles has a "cool" Granny Smith apple and grass-clipping scented nose. Quite tight and primal at the moment. The well-balanced palate has a fresh, flinty opening and a vibrant malic finish, with a dash of black pepper on the aftertaste.

You could argue that Sébastien Caillat’s day job is running the vineyards of Domaine Lamy-Pillot that belong to his wife’s family. Usually, I don’t have the time to taste them, but on this occasion, I asked if he could pour me a small selection. He told me that the cellar at Lamy-Pillot is a little warmer than at Lamy-Caillat, so the wines undergo shorter élevage. He is also gradually using more WineGlobes as he prefers their lower micro-oxygenation levels than regular barrels. He mentioned that since 2021, for the red cuvées, he has built a millefeuille of de-stemmed and whole bunches in the tank to enhance intra-cellular fermentation. I did inquire how easy it is to put on a different “casquette” and make reds, but Caillat said he savors the challenge. Readers should seek out the Chassagne Morgeots and not overlook a splendid red in the form of his Clos Saint-Jean.

Karine and her husband Daniel are responsible for sales and administration.
This real family domain has more than 20 hectares of vineyards and with this they make a wide range of both white and red wines. Lamy-Pillot wines are characterized by being very rich wines with a luscious texture. In the nose floral tones, ripe fruit and a refined touch of wood. The same aromas are reflected in the taste. The fine acidity gives the whole extra complexity. The wines of Domaine Lamy-Pillot now also belong to the very scarce Bourgognes with high ratings from the international wine press year-in-year-out.
