2021 Vina Carmen Cabernet Sauvignon Reserva Premier 1850 BIO

When making the Cabernet Sauvignon Reserva, the aim is to produce a mature and powerful wine, which at the same time has all the characteristics of an Old World Cabernet, through a special freshness and vibrancy. The Cabernet is planted in Colchagua Valley, in a temperate climate on a beautiful soil of river clay and boulders. With yields of around 70 hectoliters per hectare, a very smooth and soft Cabernet can be made. A cold soak of no less than ten days gives the wine extra fruit and color. The perfectly ripe fruit allowed a fermentation of no less than five weeks, to give it a lot of power and intensity. With fermentation at a fairly low temperature, of around 26 ºC, the fruit in the wine is nicely preserved. 80% of the wine is aged for 10 months in French and American oak barrels. That's enough to give it a pleasant vanilla note, without sacrificing the fruit. The rest stays on stainless steel, for some extra freshness. By adding a dash of Carmenère it gets a small subtle pepper and a light spiciness. Wonderfully smooth and at the same time a nice tasteful red.

The Cabernet Reserva Premier 1850 is made from the classic Bordeaux grape and brings a wine with a wonderfully elegant and soft character, bursting with fruit, with cassis and blueberries, a hint of mint, wonderfully lively, sultry and juicy. Also classic aromas of the cabernet, such as pencil sharpening and cedar. On the palate Elegant taste, smooth and accessible, a hint of paprika, black cherries and cassis, lively and juicy. Perfect with grilled sirloin steak, duck, hard aged cheeses.
