Description
One of the stars of the Valdeorras/Galicia is the winery Val De Sil which focuses strongly on the Galician grape Godello and the red Mencia. The bodega has its vineyards in the valley Sil with its unique slate soils which make the wines of this house unique.
The Valdesil Valteiro is perhaps one of the most unique wines. Valteiro is the name of a small Peza (plot) located in the village of Portela. Francisco Prada Gayoso is committed to the preservation of native Gallic grape varieties and planted this small plot of only 0.3HA in 1985 with the Gallic grape María Ardoña in 1985 convinced of the potential of this grape and has now made a world-class wine from it. Unique to this grape in combination with the terroir is that it is a very elegant wine with a beautiful minerality as a result of the unique terroir of the Valteiro vineyard. The Valteiro has matured for 6 months in 500L French oak barriques, then 18 months in a stainless steel tank and then gets another 6 months of bottle maturation before the wine is released on the market. The wine has beautiful notes of wild berries, violets and a hint of minerals. The wine has a nice storage potential thanks to its beautiful tannins. The Valteiro is fresh, complex and original. If you are looking for a beautiful wine with an excellent price/quality and not an average wine, we can heartily recommend the Valteiro. This should not be missing in a beautiful wine collection.
The Valdesil Valteiro María Ardoña is a special red wine from Galicia (Spain), made from the rare grape variety María Ardoña , a local variant of the Merenzao (related to Trousseau). The wine is elegant, light, fresh and aromatic, with notes of red fruits (such as raspberry and cherry), floral accents, a mineral undertone and lively acidity. The wine is comparable in style to refined wines from the Jura or light Burgundies, and calls for dishes that are subtle and not too heavy.
Below you will find some suitable wine and food pairings using easily available ingredients, including an explanation of why these combinations work well:
1. Grilled chicken fillet with thyme and roasted vegetables
The soft texture of chicken and the spicy touch of thyme match well with the refined character of the wine. The roasted vegetables (such as carrot, pepper and zucchini) add a sweet accent that enhances the ripe red fruit in the wine.
2. Fried mushrooms with garlic and parsley on toast
Mushrooms bring earthy flavors that blend nicely with the mineral and slightly spicy tone of the María Ardoña. Garlic and parsley enhance the aromatic expression of the wine without overpowering it.
3. Pasta with tomato, basil and Parmesan cheese
A classic combination where the acidity of the tomato sauce perfectly matches the lively acidity of the wine. The red fruit character is enhanced, while the Parmesan cheese provides structure and a soft salty touch that balances the elegance of the wine.
4. Roasted beet salad with goat cheese and walnuts
The earthy sweetness of beets and the creamy, fresh character of goat cheese perfectly complement the light and fruity profile of the wine. Walnuts add extra structure and a slightly bitter note that goes well with the fresh character.
5. Tuna tataki with sesame and soy dressing
For those who dare to experiment, the wine can pair surprisingly well with tuna thanks to its elegance and acidity. The light umami of soy sauce and the subtle spiciness of sesame emphasize the complexity of the wine without overshadowing the fruit.

Gold was once mined in the Galician region of Valdeorras, the 'golden' valley, but today it is wine. In particular white wine from a special grape, godello and red wine from the grape Mencia. The variety grows on slopes and on plateaus around the river Sil and has been successfully transformed into fine wines. The Valdesil family domain is one of the most prominent houses that sources its grapes from all kinds of small plots, partly granite-containing, partly sandy, partly with slate. The sticks are often very old (top). Val De Sil has made the Godello and Mencia wines from the Valley de Sil famous.
Bodegas Valdesil is located in Vilamartín de Valdeorras in the deep west of Spain, approximately 180 km southeast of Santiago de Compostela. The history of the winery begins in the year 1885, when the winegrower José Ramón Gayoso began planting godello grape vines on the slate slopes of the Sil valley. Everyone made fun of him at the time. Although Gayoso later gave up the vineyard, the plants survived, and today the same genetic material is still used here. The modern history of the winery starts in 1991. In that year the Prada-Gayoso family brings the vineyards back in top condition. Today the winery covers 20 ha. Of these, many are small plots of old godello plants. Some vineyards are located at the best spots of Valdeorras, especially on the sunny slopes at Córgomo and Portel. The red grape variety mencía is also grown here. A total of six wines are made from both grape varieties. Bodegas Valdesil is one of the most reliable producers in Galicia, "a very reliable source for quality wines from Valdeorras", says Robert Parker's Wine Advocate.
