The Pallio di san Floriano Verdicchio dei Castelli di Jesi Classico Superiore is made by the Monte Schiavo winery. Monte Schiavo is part of Tenute Piralisi and is located in the Marche or Marche. The Verdicchio bianco is a white grape variety from the Marche and is a very old variety, and although it has existed in the Marche for centuries, its birthplace is most likely Veneto, from where it spread south in the 15th century.
The Pallio is made from 100% Verdicchio on the Guyot system and is obtained from a late harvest of Verdicchio grapes from a beautiful estate vineyard. The Verdicchio dei Castelli di Jesi DOC Classico Superiore takes its name from the ancient medieval ceremony still held in the town of Jesi.
Vinification at controlled temperatures in stainless steel vats. The wine then matures for approximately 5 months on the fine lees (sur lie) before being bottled. Crystal clear in the glass, straw colored with green-gold accents. This delicious wine has intense and powerful aromas of ripe tropical fruit and citrus fruits, and tastes very delicate with notes of sage and almond and also leaves a long-lasting, pleasant aftertaste. Due to its great structure and intensity, it is particularly suitable with roast fish, fried foods and white meat.
ABOUT THE GRAPE VERDICCHIO
When you say Verdicchio, your thoughts immediately go to the Marche region. The reason is easy to explain: it is the most common native white grape variety of the area. Its scarce ability to adapt to areas beyond those of Castelli di Jesi and Matelica give it a strong territorial characterization. Morphologically and DNA-wise, it is identical to Trebbiano di Lugana and Trebbiano di Soave, grapes found between Lake Garda and the western part of Veneto. Some similarities are Verdello, Verduschia, Peverella (only in the autonomous province of Trento) and Trebbiano Verde (only in Lazio).
Its presence in the area between Ancona and Macerata has been longstanding and is certified by various documents, mainly notarial deeds, dating back to the Middle Ages. The origin of the name is quickly explained: even at full ripeness, the grapes never lose those shades of green that characterize the bunch. In the vineyard it appears to have a sterile quality in the first two buds, resulting in short prunings.
In addition, it is quite delicate in terms of its resistance to mildew and other diseases and therefore it should be grown on well-exposed and airy hills. It ripens in a regular period, that is, between September and early October. Its bend gives way to a wide choice of interpretations: it can be harvested in advance to produce spumanti with personality, but also for vintages where the fresh citrus sensations can be captivated, or it can be harvested as soon as it is ripe to produce broader fruity sensations to obtain. Verdicchio is also suitable for over-aging, where hints of candied fruit and aromatic herbs are present to create refined white wines from partially dried grapes. It loves fermentation in steel, but also tolerates aging in wooden barrels of different volumes, just as it is suitable for the fermentation of red wines and their subsequent aging in earthenware amphorae. This is why it is universally recognized as a complete, versatile variety. Its distribution throughout the territory of the Marche region is a consequence of its nature and it is not rare to find it in the area of ​​Ascoli Piceno, where it was one of the elements of the varieties that gave life to the denomination Falerio dei Colli Ascolani

Owned since the 1960s by one of the most famous families of entrepreneurs and winemakers in the Marche region, the Pieralisi estate was created with the creation of the Monte Schiavo winery in 1976 in Maiolati Spontini, in the province of Ancona, in the heart of the classic production area of ​​Verdicchio dei Castelli di Jesi. Since the foundation of Monte Schiavo about 20 years ago, the Pieralisi family has strived to get the best out of their vineyards. The Tenuta Pieralisi range represents the culmination of their project — leveraging the expertise of winemaker Simone and renowned consultant Carlo Ferrini — to create a top layer of premium wines that confirm the individuality of the indigenous varieties Verdicchio and Montepulciano. Carlo Ferrini has worked as a consultant at some of Italy's finest estates — optimizing cloning, rootstock, vine density and pruning — to create wines that are a true expression of the vineyard. At the same time, Simone has revitalized the cellar and added an extra layer of vibrancy and expression to the wines, making Monte Schiavo a producer of top quality authentic wines.
