History of the L'Aventure winery

The 2021 L’Aventure Optimus is the result of the visionary approach of French winemaker Stephan Asseo in Paso Robles, California. After 17 years of experience in Bordeaux winemaking, Asseo chose Paso Robles for his next adventure, driven by the freedom to venture beyond traditional appellation boundaries. This decision led to the creation of L’Aventure Optimus, an expressive blend that embodies the unique terroir of Paso Robles.

About the L'aventure Optimus 2021

The name "Optimus" is a creative ode to the crucial advice Stephan Asseo received from renowned Napa Valley wineries Opus One and Dominus. This advice led him to Paso Robles, the place with the limestone terroir he sought for his vineyard. The word "Optimus" thus reflects a fusion of the wineries Opus One and Dominus Estate, in recognition of the golden tip that formed the basis for the success of L'Aventure.

The 2021 vintage of L'Aventure Optimus is a carefully composed blend of 58% Syrah, 31% Cabernet Sauvignon, and 11% Petit Verdot. Characterized by a medium ruby-purple color, this wine reveals pure aromas of red and black berries, enriched with earthy, autumnal notes and a subtle spiciness. The medium-bodied palate is grainy and fresh, with a beautiful floral perfume that continues into the long finish.

Paso Robles: The 'Rhone' of California

As a pioneer in winemaking, Stephan Asseo emphasizes the importance of creativity and innovation in Paso Robles. L'Aventure benefits from a unique terroir, consisting of gravelly and calcareous soils on rolling hills, which contributes to the expressiveness and complexity of the wine. The 16-month aging in a mix of new and one-year-old French oak enhances the structure and adds subtle vanilla notes without overwhelming the purity of the fruit.

Stephan Asseo, owner and winemaker at L'Aventure Winery, started making wine in 1982, after his education at L'Ecole Oenologique de Macon, Bourgogne, France. In the same year, Stephan founded Domaine de Courteillac in Bordeaux. He and his family later bought Chateau Fleur Cardinal and Chateau Robin in the Cotes de Castillion, Bordeaux. Over the next 15 years, Stephan developed into an artisan winemaker with exacting craftsmanship and gained a reputation as a "maverick winemaker". However, his true desire was to be more innovative than AOC law would allow. This led him, his wife Beatrice and his three children, including his daughter Chloé, on a 1996 search for a great terroir, where he could pursue his ideal as a winemaker. After searching for over a year among the world's greatest wine fields, ranging from South Africa to Lebanon, from Argentina to Napa, they found Paso Robles. Stephan and Beatrice instantly "fell in love" with the unique terroir of west side Paso Robles. The rolling topography of the Santa Lucia Mountains, the deep calcareous soils and the maritime influences of the famous Templeton Gap combine to create a world-class wine country, with the potential to make some of the world's finest blends. Here, in Paso Robles, Stephan and his family started their adventure "L'Aventure" in 1998.

The spirit of L'Aventure is most apparent in Stephan's "Paso Blends", such as Optimus and Estate Cuvée. Both wines are blends of Syrah / Cabernet Sauvignon / Petit Verdot. In these wines, as well as in our Rhône blend Côte à Côte, the blending of premium grape varieties increases the authenticity, complexity and balance of the wines. In this adventurous spirit we find the future of Paso Robles wines...great, well-balanced red blends.
